Roasted Baby Onions with Cheese on Toast

December 30, 2017 By All That I'm Eating 7 Comments

baby onions

There’s always something leftover at this time of year; some sort of ingredient hanging around in the fridge that needs using up. I’d bought some baby onions for making a boeuf bourguignon and had half the pack left. I thought about slicing them and lightly pickling them but I then realised I also had some leftover cheese. You can never go wrong with cheese and onion so half an hour later we were tucking into roasted baby onions with cheese on toast.

Ingredients

You will need (for two):

  • 12 (ish) baby onions, peeled
  • 2 sprigs fresh rosemary
  • Olive oil
  • Salt and pepper
  • 1 tsp sugar
  • 4 slices white bread, the crustier the better
  • Leftover cheese, grated

Method

Put the onions and rosemary into a baking dish and drizzle over a little oil and salt and pepper. Roll the onions round in the dish so they get well coated in the oil and seasoning. read more

Chipotle and Bean Soup

December 7, 2017 By All That I'm Eating 11 Comments

mixed bean, sweetcorn and chipotle chilli soup

I really struggle to know what to have for lunch sometimes. Usually I am scrambling round in the cupboards trying to find some sort of suitable sandwich filling but I do get terribly bored of sandwiches. If I’m lucky I’ll have some keptovers to warm up and I do pay a visit to a local independent café from time to time too. Well enough is enough. I have decided to batch cook and freeze a range of healthy, filling, vegan soups; one of which is this Chipotle and Bean Soup. So that I can grab whichever soup I fancy and not have to think about what’s on the meal plan for dinner I am making them vegan, stuffed full of veg and flavour packed. I hate to have the same thing for lunch and dinner you see! read more

Autumn Vegetable Minestrone

November 19, 2017 By All That I'm Eating 14 Comments

The weather has certainly changed, although I do consider November to technically be in autumn things have started to get much wintrier. With ice in the mornings, digging scarves and hats out of the drawers and the fire blazing it’s definitely the time of year for soup. The more filling and comforting the soup the better and my autumn vegetable minestrone is exactly that; a restorative bowl of loveliness. Filled with six different vegetables including beans to bulk it all out it’s simple, speedy, cheap and delicious. read more

Harissa Roasted Squash and Red Rice

November 7, 2017 By All That I'm Eating 7 Comments

Sometimes things look tastier than they are and I often find that the reverse is also true. This harissa roasted squash and red rice looks ok, if slightly on the orange side, but trust me when I say it is delicious. Full of colour and flavour, the slight spiciness from the harissa works wonders with the sweet butternut squash. Red rice does take longer to cook than white rice but its nutty wholesomeness is well worth the wait. Bung this oven, sit back and get ready for a taste of autumn; it’s ready faster than you’d think. read more

Miso Roasted Aubergine with Rainbow Chard and Soy Dressing

October 11, 2017 By All That I'm Eating 14 Comments

There’s a bit of a miso theme on the blog at the moment. For two reasons: firstly, miso is delicious and secondly, it’s expensive and you have to buy quite a lot. So I needed to use up my stash and I really wanted to have a go at my own miso roasted aubergine. Most of the ingredients used are pretty standard store cupboard staples; I was pretty amazed how much more than the sum of its parts this recipe is. It’s fantastic, if I do say so myself, and my miso glaze and my soy dressing will be making many future appearances in my kitchen. read more

Black Bean Quesadillas

September 19, 2017 By All That I'm Eating 17 Comments

I have made these black bean quesadillas a few times and I am always surprised how filling they are! They are deliciously full of black beans, spices and cheese and are really simple to make. You could add different beans, leftover chilli (or maybe leftover vegan chilli) and serve with your favourite dips. I love scooping up a big load of guacamole; but then I am a guacaholic. Sour cream, chilli sauce, salsa or whatever you like would be amazing on the side of these. One quesadilla each might not sound like a lot, but they are seriously filling. read more

Rosemary and Garlic Butter Halloumi

July 20, 2017 By All That I'm Eating 20 Comments

Say the word halloumi around other people and pretty much all of them will say, “I love halloumi” and then lick their lips. Well, I count myself as one of those people and I’ve got news for you. Rosemary and garlic butter halloumi takes your squeaky cheese to a whole other glorious level. Let’s be frank, shove some garlic butter on anything and it’s instantly better. Note – ‘anything’ does not include bruises or grazes, missing wall or floor grout or use as shampoo and face cream; shoving garlic butter in any of those places will be of no help to you whatsoever. Delicious, full fat, dripping in butter, full of flavour is what we’re looking for here, those of a healthy disposition look away now. read more

Tomato Baked Feta

July 2, 2017 By All That I'm Eating 17 Comments

Feta’s not just for salads you know. I enjoyed something similar to this tomato baked feta while in Greece a few years ago; I needed to try and make it at home. I have previously posted about some Greek inspired feta and tomato spaghetti (which is delicious by the way) and the key to both of those dishes is using the best tomatoes and feta you can get your hands on. In this case it’s also about baking the tomatoes perfectly; not too hot so that they dry out and not too cool so that they turn into mush. read more

Tomato and Mascarpone Gnocchi Bake

June 21, 2017 By All That I'm Eating 13 Comments

I think this is a perfect meal in many ways: firstly, it’s just the right size for two people; secondly, it’s really simple to make; thirdly, it’s deliciously vegetarian and full of veg and lastly, it’s really versatile. My tomato and mascarpone gnocchi bake is made from a few ingredients which I often have in the kitchen anyway. Just the thing for a busy Monday night when you want something quick and tasty. You could add anything to it that you had hanging around in your cupboards, maybe some olives, sundried tomatoes, leftover chicken or roasted veg or you could pop some cheese on top. read more

Squash and Chickpea Tagine

June 8, 2017 By All That I'm Eating 16 Comments

This is actually surprisingly quick to make and I normally have some or most of these ingredients in the kitchen so it’s a great recipe to keep coming back to. My squash and chickpea tagine is a great way to use up some spices and a few tins from the cupboard. The fennel and paprika aren’t perhaps the most traditional tagine ingredients but I really think they add to the sweet squash and earthy chickpeas. If you roasted the squash before adding it I think it would be even tastier. Try and find apricots that aren’t completely dry, when they’re still a little soft they have a beautiful honeyed flavour. A few toasted flaked almonds on the top would give a lovely crunch to the dish. read more
