Spinach and Potato Kofta Curry

February 27, 2020 By All That I'm Eating 22 Comments

I love koftas in a curry. More often than not they are lamb based and I wanted to try and make a vegetarian version. My spinach and potato kofta curry came about because I wanted the main part of it to be roughly based on saag aloo. This is a bit more effort than some of my other recipes, but, I've made double batches of both the koftas and the sauce and frozen them so I can have it again with no effort at all! ingredients You will need Read more

Easy Vegetable Lasagne

February 10, 2020 By All That I'm Eating 18 Comments

There's a very good reason why this is an easy vegetable lasagne: there's no béchamel! One of the things I love most about lasagne is how comforting it is, all those layers of pasta and sauce, so I didn't want to miss any of that by cutting out a few steps. It's still creamy and cheesy but only uses one sauce. This is such an easy recipe and you can use whatever vegetables you have to hand. ingredients You will need (for four portions): 1 Read more

Creamy Lentil Pasta Bake

January 6, 2020 By All That I'm Eating 22 Comments

You know those small pasta shapes you can buy which are ideal for minestrone? Well, it turns out they make a really good pasta bake. I found this out by accident when making my creamy lentil pasta bake and looked in the cupboard to find only teeny tiny bows to hand. This is a seriously tasty and very filling vegetarian pasta bake which is crammed full of veg with a little added double cream for a touch of weeknight luxury. Ingredients You Read more

Rainbow Carrot Tart with Summer Herbs and Goat’s Cheese

September 17, 2019 By All That I'm Eating 26 Comments

I often get left with carrots at the bottom of the fridge. They play an overlooked, but important, base in so many meals: part of a mirepoix, in casseroles and in pies to name a few. Rarely, in my kitchen anyway, do the carrots get to be the star of the dish. So when some beautiful rainbow carrots arrived in the veg box it would have been rude to simply chuck them into various dinners. This time, I wanted to celebrate this lovely root in a rainbow Read more

Green Summer Vegetable Lasagne

July 24, 2019 By All That I'm Eating 19 Comments

It is important to note that this recipe is not shy on calories. There's cheese, double cream, lashings of olive oil, layers of pasta and plenty of veg. My green summer vegetable lasagne is quicker to make than a traditional lasagne (there's no baking) and you can use the sauce with any pasta if you so choose. I like to think that all that green veg negates the calories and I happily ploughed through a whole plate of this. Bear in mind, I am very Read more

Roasted Tomatoes and Burrata

May 18, 2019 By All That I'm Eating 15 Comments

When you get your hands on some truly spectacular ingredients they don't need much interfering with. I picked up some sublimely sweet tomatoes and a small burrata at a market recently and I wanted these simple ingredients to shine. My balsamic roasted tomatoes and burrata were served with a warm olive studded focaccia which we enjoyed eating outside for the first time this year. When you're serving up tomatoes, cheese and warm bread can you really Read more

Vegetable Keema Rice with Crispy Paneer

March 5, 2019 By All That I'm Eating 13 Comments

At this time of year I get all the spices out of the cupboard and start to use those that I forgot about over the summer months. I found a tub of my homemade keema spice mix and although I know it's delicious with lamb I wanted to try and make a veggie version. After trying out a few different vegetables and quantities I decided that I like this version of my vegetable keema rice the best. Not only is it easy and filling, it's also got four different Read more

Three Cheese and Cauliflower Macaroni

January 3, 2019 By All That I'm Eating 9 Comments

I often make macaroni cheese, or some variation of it. I like to play around with adding vegetables, different cheeses or flavours in the sauce. This three cheese and cauliflower macaroni cheese is one of the most delicious I've made. The combination of Emmental (for sweetness and stringiness), Cheddar (for bite and cheesiness) and Parmesan (for savouriness) means you get the best of all the cheeses! And don't worry, there's a cauliflower in there Read more

Gnocchi, Kale and Spinach Gratin

October 29, 2018 By All That I'm Eating 16 Comments

Sometimes I end up with an awful lot of veg in my fridge. I use bits and bobs throughout the week but despite my best brassica consuming efforts I still get left with some of it. These leftovers often end up in a soup (my autumn minestrone is a great way to use kale) but recently I wanted to make something different. I really like green veg with pasta so I grabbed my veggies, some gnocchi and cheese and set about making a gnocchi, kale and spinach Read more

Chargrilled Broccoli, Potato and Pesto Salad

October 1, 2018 By All That I'm Eating 11 Comments

It was one of those evenings. You know the ones, where you look in the fridge expecting a sudden moment of inspiration and the fridge just stares blankly back. I’d put something down on the meal plan but for one reason or another didn’t manage to cook it; sometimes I forget to buy an ingredient or I use it all in another meal forgetting to save any for later in the week. My potato, chargrilled broccoli and pesto salad came out of seemingly nowhere. Read more
