BBQ Lamb Kebabs with Halloumi

August 15, 2019 By All That I'm Eating 14 Comments

Most people would take one look at our barbecue and wonder what on Earth we were thinking when we bought it. As non-seasoned barbecuers we didn't want to splash the cash and bought pretty much the cheapest barbecue we could find. It's cast iron, uses coal or wood and has just enough space for food for two or three people and it's brilliant. Of course, the first ever barbecue was too hot, the second was too cold but we are pros now and not even a Read more

Green Summer Vegetable Lasagne

July 24, 2019 By All That I'm Eating 19 Comments

It is important to note that this recipe is not shy on calories. There's cheese, double cream, lashings of olive oil, layers of pasta and plenty of veg. My green summer vegetable lasagne is quicker to make than a traditional lasagne (there's no baking) and you can use the sauce with any pasta if you so choose. I like to think that all that green veg negates the calories and I happily ploughed through a whole plate of this. Bear in mind, I am very Read more

My Favourite Summer Recipes

June 27, 2019 By All That I'm Eating 18 Comments

My kitchen is very much an 'open all the windows' space in the late spring and summer months. I feel as if I am cooking half outside you see. My favourite summer recipes are those which are quick to make, involve minimal time standing over a hot hob and can be luxuriated over when it comes to eating. At this time of year I get to partake in one of my very favourite kitchen tasks: podding beans and peas. Is it just me who finds it incredibly satisfying? The Read more

Carrot Falafel and Quick Pickled Onions

August 27, 2018 By All That I'm Eating 13 Comments

I've tried to make falafel a few times before without much success; it seems to fall apart when I cook it. Experimenting with this falafel recipe, a bit more of this and a bit less of that, means that I've now ended up with a pretty sturdy recipe. These carrot falafel are really easy to make; everything gets blended together, and I've served them with all my favourite sides. Quick pickled onions will be appearing on everything from now on!

Runner Bean and Tomato Stew

August 20, 2018 By All That I'm Eating 14 Comments

It’s bean season at the moment. There’s runner, French, broad and all manner of other beans popping up in the veg box, at the farmers’ markets and in friends’ gardens. I love a perfectly cooked and simply dressed bean salad; a little drizzle of oil, a squeeze of lemon and a little seasoning. However, from time to time it’s nice to do something different and this runner bean and tomato stew is a much slower way of cooking with green beans.

Moussaka – without frying the aubergines

August 14, 2018 By All That I'm Eating 12 Comments

Moussaka is one of my favourite dishes to eat. It's a bit of an involved one to make, you need four different cooking pans going to make all the component parts; that's why I don't make it very often! Frying the aubergines, I think, is one of the most laborious parts of making the moussaka so I've got a different way of doing it. My moussaka without frying the aubergines is every bit as good as the original and you use far less oil than if you fry Read more

Smoked Chicken Caesar Salad

August 8, 2018 By All That I'm Eating 8 Comments

There’s something about an iceberg lettuce and I feel it is sometimes a little overlooked. When it’s properly crunchy it’s so refreshing and I think rather delicious. My Smoked Chicken Caesar Salad is a recipe which is perfect for the hot weather we are having at the moment. I didn’t make the dressing myself but a homemade dressing would be fantastic. Personally I didn’t fancy all that whisking, I much preferred the idea of sipping a well Read more

Strawberry and Peanut Tart

August 1, 2018 By All That I'm Eating 12 Comments

Minimum fuss and maximum results were the name of the game with my most recent dessert. Another hot day, the last thing I needed was to be baking pastry, so I didn’t, but made a tart nonetheless. My Strawberry and Peanut Tart makes use of a few sneaky kitchen shortcuts to make a delicious and impressive pudding. A chocolate and peanut base smothered with cream and stacked high with fresh fruit it almost seemed a shame to cut into it. But, you know, Read more

Simple BBQ Sides

July 25, 2018 By All That I'm Eating 8 Comments

We bought our first ever BBQ this year. Not knowing how much it might get used we went for a basic entry level one which has been great, and it's getting used at least once a week at the moment. When the BBQ is on I like to be outside, nice cold drink in hand, to watch everything cooking. That's why these simple BBQ sides are my go to recipes whenever we're cooking al fresco. I can make them quickly in the kitchen so they are ready to go once the Read more

Aubergine and Ricotta Gnocchi Bake

July 12, 2018 By All That I'm Eating 10 Comments

What's that? More aubergines? Yes actually, and I make no apologies because this Aubergine and Ricotta Gnocchi Bake is so good that I think we can all forgive if I've been a little heavy on the aubergine recipes of late. The key to this dish comes down to two things. Firstly, the aubergine has to be fried beautifully to make sure it's soft, silky and golden brown. Secondly, adding a handful of cherry tomatoes really transforms the tomato base as it Read more

  • These turnovers make use of all manner of Christmas leftovers: cheese, pickles and butter. This particular batch were smoked cheddar and pickled onion. The recipe is really versatile so you can use whatever cheese, pickle, chutney or whatever else you fancy and have lying around. #leftovers #ChristmasFood #turnovers #smokedcheddar #pickledonions #allthatimeating #christmasleftovers #decembereats #cheeseandonion
  • New recipe up on the blog! For those of us who like mincemeat, just not too much of it. These are my Mince Pie Crumble Bars, mostly shortbread with a slathering of mince meat and a deliciously crumbly top. • Christmas music on, production line assembled, homemade Christmas gifts go! I love making these to give as gifts; using up old jars, candy cane string and paper labels. I won't lie, I always do a whisk and taste test myself first. At least once. It's the malted drink powder that makes them 👌. Recipe for these is on the blog, just search 'hot chocolate'. #foodgiftideas #hotchocolate #homemadegifts #foodgifts #allthatimeating #handmadegifts #christmasfood #decemberdrinks #besthotchocolate
  • Hmmm. Ever so slightly too wide for the gap but looking adorned, sparkly and smelling lovely. Nothing matches on the tree, much like the rest of the house. Decorations from Kenya, Sweden, Bakewell and all sorts of other places. Put up a few days earlier than usual but we’re making up for no tree last year! #christmastree #mismatched #decoratingforchristmas #allthatimeating #smellssogood #christmaslights #fullofmemories
  • I ‘made’ this wreath a few years ago now. I say made, I mean I glued some @innocent smoothie hats to a willow wreath. I like that it’s colourful and uses the hats that I otherwise didn’t know what to do with. Apart from keeping dippy eggs warm. #christmaswreath #innocentsmoothiehat #homemadewreath #upcycled #minibobblehats #feelingfestive🎄 #colourfulwreath
  • Little bites of Christmas. Rolling these chocolate truffles in crushed pistachios makes them almost look like sprouts! Dark chocolate mixed with cranberries for a festive treat. Recipe is over on the blog, just search 'truffle'! #truffles #foodgifts #chocolatetruffles #homemadegifts #cranberrychocolate #allthatimeating #decembereats #christmasrecipes #pistachio
