Spring Vegetable Tray Bake

April 23, 2019 By All That I'm Eating 13 Comments

There's a certain time of year where the contents of the veg box are suddenly more vibrant. There's something red or orange which isn't a carrot and something green which isn't cabbage. Don't get me wrong, I have nothing against a good brassica but when the first spring vegetables come through you know that it's not long until the spring and summer veg are in full swing. To mark this occasion I made a spring vegetable tray bake; to celebrate all Read more

Apricot and Coconut Granola

November 3, 2018 By All That I'm Eating 12 Comments

I used to think I didn't like dried apricots. As it turns out, I do, but only the extra squidgy unsulphured ones. When you bite into them or pull them apart it's almost like they are full of thick honey and you can see the strands of sticky apricot trying to hold on to the other half. They are the perfect addition to some apricot and coconut granola; a burst of sunny-day flavours for breakfast is how I like to start my day.

Chargrilled Broccoli, Potato and Pesto Salad

October 1, 2018 By All That I'm Eating 11 Comments

It was one of those evenings. You know the ones, where you look in the fridge expecting a sudden moment of inspiration and the fridge just stares blankly back. I’d put something down on the meal plan but for one reason or another didn’t manage to cook it; sometimes I forget to buy an ingredient or I use it all in another meal forgetting to save any for later in the week. My potato, chargrilled broccoli and pesto salad came out of seemingly nowhere. Read more

Carrot Falafel and Quick Pickled Onions

August 27, 2018 By All That I'm Eating 13 Comments

I've tried to make falafel a few times before without much success; it seems to fall apart when I cook it. Experimenting with this falafel recipe, a bit more of this and a bit less of that, means that I've now ended up with a pretty sturdy recipe. These carrot falafel are really easy to make; everything gets blended together, and I've served them with all my favourite sides. Quick pickled onions will be appearing on everything from now on!

Runner Bean and Tomato Stew

August 20, 2018 By All That I'm Eating 14 Comments

It’s bean season at the moment. There’s runner, French, broad and all manner of other beans popping up in the veg box, at the farmers’ markets and in friends’ gardens. I love a perfectly cooked and simply dressed bean salad; a little drizzle of oil, a squeeze of lemon and a little seasoning. However, from time to time it’s nice to do something different and this runner bean and tomato stew is a much slower way of cooking with green beans.

Jerk Carrots with Rice and Beans

June 5, 2018 By All That I'm Eating 9 Comments

Jerk seasoning has to be one of my favourites. No matter what time of year it is there's always room for something to be cooked up with it; sticky jerk chicken in the autumn, a fiery casserole in the winter or when the new season arrives, jerk carrots. This recipe came out of a need to use up a whole load of carrots and I certainly didn't want to make soup. I can see it working really well on the BBQ as a spicy veggie side in the coming weeks too. Miso Glazed Aubergine with Pickled Cucumber Salad

May 23, 2018 By All That I'm Eating 10 Comments

I'm not ashamed. I will admit it. I am an aubergine-aholic. Babaganoush, parmigiana, in a curry, moussaka, stirred through pasta there isn't any meal I don't love which has aubergines in. This recipe may sound familiar, as I have made something similar before, but this miso glazed aubergine when combined with a quick pickled cucumber salad really is a match made in heaven. Depending on the size of your aubergines this takes around half an hour to Read more

Carrot, Chickpea and Harissa Soup

March 14, 2018 By All That I'm Eating 10 Comments

I meal plan. Only the dinners mind you. I'd like to think I was organised enough to plan fantastic breakfasts and fabulous lunches but I'd much rather have longer in bed each morning than fuss around with an avocado and quickly grab something easy for lunch in the week. However, there are consequences to this nonchalant attitude of mine. What if disaster strikes? What if, as I enjoy my chicken sandwich for lunch I realise that chicken is on the meal Read more

Smoked Pea and Potato Soup

March 6, 2018 By All That I'm Eating 16 Comments

There's been a spate of soup recipes appearing on my blog recently. I'll tell you for why: because there's nothing more comforting I would like to have for lunch during the week. Sure, a steaming bowl of cauliflower cheese would be a fantastic winter luncheon but that's more effort than I am willing to put in for what is effectively the most rushed meal of the week. So instead I take a bit of time at the weekend and batch cook some soup, freeze it Read more

Cauliflower and Sundried Tomato Pasta

January 31, 2018 By All That I'm Eating 15 Comments

I always think cauliflower is at its very best when served with cheese. As much as I think this is still true I have been really enjoying roasting and frying it lately and this cauliflower and sundried tomato pasta is my current favourite way to eat cauliflower. Cheap to make, vegan, delicious and so fast to cook; we're talking 15 minutes from fridge to table. If only all weeknight cooking could be like this!

  • New recipe up on the blog! For those of us who like mincemeat, just not too much of it. These are my Mince Pie Crumble Bars, mostly shortbread with a slathering of mince meat and a deliciously crumbly top. Head to my bio and click the link to get the recipe! #christmasbaking #alternativemincepies #mincemeat #allthatimeating #festiverecipes #decembereats #shortbread #flavoursofchristmas #crumblebars
  • Christmas music on, production line assembled, homemade Christmas gifts go! I love making these to give as gifts; using up old jars, candy cane string and paper labels. I won't lie, I always do a whisk and taste test myself first. At least once. It's the malted drink powder that makes them 👌. Recipe for these is on the blog, just search 'hot chocolate'. #foodgiftideas #hotchocolate #homemadegifts #foodgifts #allthatimeating #handmadegifts #christmasfood #decemberdrinks #besthotchocolate
  • Hmmm. Ever so slightly too wide for the gap but looking adorned, sparkly and smelling lovely. Nothing matches on the tree, much like the rest of the house. Decorations from Kenya, Sweden, Bakewell and all sorts of other places. Put up a few days earlier than usual but we’re making up for no tree last year! #christmastree #mismatched #decoratingforchristmas #allthatimeating #smellssogood #christmaslights #fullofmemories
  • I ‘made’ this wreath a few years ago now. I say made, I mean I glued some @innocent smoothie hats to a willow wreath. I like that it’s colourful and uses the hats that I otherwise didn’t know what to do with. Apart from keeping dippy eggs warm. #christmaswreath #innocentsmoothiehat #homemadewreath #upcycled #minibobblehats #feelingfestive🎄 #colourfulwreath
  • Little bites of Christmas. Rolling these chocolate truffles in crushed pistachios makes them almost look like sprouts! Dark chocolate mixed with cranberries for a festive treat. Recipe is over on the blog, just search 'truffle'! #truffles #foodgifts #chocolatetruffles #homemadegifts #cranberrychocolate #allthatimeating #decembereats #christmasrecipes #pistachio
  • A marvellous alternative to a traditional Yule Log. No rolling involved! Mine is made from marshmallow, rice crispies and honeycomb. A doddle to make, it makes a lovely centrepiece! Find the recipe over on my blog, search 'yule log'. #yulelog #chocolatelog #christmasdesserts #centrepiece #allthatimeating #christmasrecipes #christmasfood #marshmallow #decembereats #yulelogcake
