Roasted Baby Onions with Cheese on Toast

There’s always something leftover at this time of year; some sort of ingredient hanging around in the fridge that needs using up. I’d bought some baby onions for making a boeuf bourguignon and had half the pack left. I thought about slicing them and lightly pickling them but I then realised I also had some leftover cheese. You can never go wrong with cheese and onion so half an hour later we were tucking into roasted baby onions with cheese on toast.

Ingredients

You will need (for two):

  • 12 (ish) baby onions, peeled
  • 2 sprigs fresh rosemary
  • Olive oil
  • Salt and pepper
  • 1 tsp sugar
  • 4 slices white bread, the crustier the better
  • Leftover cheese, grated

Method

Put the onions and rosemary into a baking dish and drizzle over a little oil and salt and pepper. Roll the onions round in the dish so they get well coated in the oil and seasoning. read more

Mince Pie Fruit Loaf

I love a mince pie, but they have to be just right. I want the pastry to mince filling ratio to be almost 50:50; too much filling and you can forget it. Preferably my mince pies will be warm and covered in (clotted, ideally) cream. However, I can’t possibly eat that every single day and I still need my mince pie fix. This is how my Mince Pie Fruit Loaf came about; designed to have all the fruity spiciness from a mince pie but without the pastry and cream. Harissa Roasted Squash and Red Rice

Sometimes things look tastier than they are and I often find that the reverse is also true. This harissa roasted squash and red rice looks ok, if slightly on the orange side, but trust me when I say it is delicious. Full of colour and flavour, the slight spiciness from the harissa works wonders with the sweet butternut squash. Red rice does take longer to cook than white rice but its nutty wholesomeness is well worth the wait. Bung this oven, sit back and get ready for a taste of autumn; it’s ready faster than you’d think. read more

Lemon Almond Biscuits

When the nights get darker and colder I reach for two things: one is the big cast iron saucepan and the other is my collection of spices. But for all the big flavours, homely soups, stews and curries that seem so apt at this time of year sometimes I crave a little delicacy. Something subtle, light and simple is what I’m after and these Lemon Almond Biscuits are exactly that. Just the ticket at the end of a busy day with a cup of tea, preferably Earl Grey. Mini Toffee Pear Pies

I think pears are annoying. Lovely, but annoying. They sit around in the fruit bowl looking all delicious and they’re never ripe. Then, when one is ready to eat the rest immediately go ripe too and then you have to eat them all at once. Well I’m not standing for it any longer, I decided that I would use the pears while they are under ripe so I can enjoy them while waiting for the others to ripen. The word ripe has lost all meaning. These mini toffee pear pies are made from surprisingly few ingredients (if you buy readymade pastry) and are just perfect for celebrating the pear in all its I’m-never-quite-ready-ok-now-I’m-too-ready glory. read more

Black Bean Quesadillas

I have made these black bean quesadillas a few times and I am always surprised how filling they are! They are deliciously full of black beans, spices and cheese and are really simple to make. You could add different beans, leftover chilli (or maybe leftover vegan chilli) and serve with your favourite dips. I love scooping up a big load of guacamole; but then I am a guacaholic. Sour cream, chilli sauce, salsa or whatever you like would be amazing on the side of these. One quesadilla each might not sound like a lot, but they are seriously filling. read more

Peanut Butter and Raspberry Brownies

I’m not sure these Peanut Butter and Raspberry Brownies need an introduction; just the name gets my mouth watering and a hankering for a piece with a coffee shortly follows. I’ll be honest from the outset, these are not exactly what you’d call healthy. They are full fat, properly indulgent, to-hell-with-it brownies. Sesame Chicken with Miso Dressing and Roasted Vegetables

Meals which are healthy, filling, full of colour and flavour and balanced are what I try to aim for with my cooking…most of the time. I always seem to come back to the same combination of chicken with some sort of grain; it’s always a winner and none more so with my latest recipe. This sesame sesame chicken with miso dressing is wholesome, flavourful and just the ticket for some quick weeknight cooking.

Ingredients

You will need (for two):

  • 2 small chicken breasts
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp ground cumin
  • Salt and pepper
  • Oil for cooking
  • 2 tbsp sesame seeds
  • 150g brown rice
  • 1 small red onion, sliced
  • 2 carrots, peeled and chopped into small chunks
  • 2 tbsp white miso paste
  • Juice 1 lime
  • 125ml plain yoghurt

Method

Start by adding the onion and carrots to a roasting tray, drizzle over a little oil along with some salt and pepper and mix everything together well. Pop into the oven at 180C for 25-30 minutes or until soft and starting to brown at the edges. read more

Dark Chocolate Orange and Pistachio Biscuits

I do love the expression ‘fart-arsing around’. When it came to making and decorating these dark chocolate orange and pistachio biscuits I wasn’t going to be fart-arsing around with any of it. An all in one biscuit dough means it’s easy to mix and haphazard throwing around of melted chocolate makes the decoration a breeze. No dunking of biscuits in chocolate for the perfect edge, no placing of individual caramelised pistachios with tweezers and you know what? I think they taste all the better for it. read more

Rosemary and Garlic Butter Halloumi

Say the word halloumi around other people and pretty much all of them will say, “I love halloumi” and then lick their lips. Well, I count myself as one of those people and I’ve got news for you. Rosemary and garlic butter halloumi takes your squeaky cheese to a whole other glorious level. Let’s be frank, shove some garlic butter on anything and it’s instantly better. Note – ‘anything’ does not include bruises or grazes, missing wall or floor grout or use as shampoo and face cream; shoving garlic butter in any of those places will be of no help to you whatsoever. Delicious, full fat, dripping in butter, full of flavour is what we’re looking for here, those of a healthy disposition look away now. read more
