Roasted Aubergine and Tomato Pasta

There have been several aubergine themed recipes on the meal plan and blog recently, I just can’t seem to eat enough of them! The combination of aubergine and tomatoes is a hard one to beat, it’s one of my absolute favourites. Even better when the veggies are roasted to intensify the flavour and served with cheese. My roasted aubergine and tomato pasta is the culmination of many attempts to get it just right. Dicing the aubergine up like this not only means a quicker cooking time but more aubergine surface area to soak up all that olive oil. read more

Chipotle Sweetcorn Hash

I love looking in my fridge and cupboards and finding ingredients and flavours to try together. Recently I wanted to try adding chipotle chillies to more than just chilli con carne and I thought it would be worth trying a pinch with sweetcorn. This chipotle sweetcorn hash came out of a mish mash of ingredients I happened to have to hand and the end result was delicious. Sticky, sweet, spicy and moreish I’ll be making this one again soon!

Ingredients

You will need (for two):

  • Knob of butter
  • Rapeseed oil (for cooking)
  • 1 small onion, finely sliced
  • 2 garlic cloves, crushed
  • 1 tsp dried oregano
  • ½ tsp chipotle chilli flakes
  • 1 tsp ground cumin
  • 1 mug frozen sweetcorn
  • 300g potatoes, scrubbed and diced into 1cm cubes
  • Juice ½ lemon
  • 2 chicken breasts
  • 2 tsp paprika
  • Salt and pepper
  • Plain yoghurt
  • Small handful fresh coriander, roughly chopped

Method

Heat the butter and a glug of oil together in a frying pan and add the onions. Fry for around 10 minutes on a medium heat before adding the garlic and all the spices and oregano. Continue to fry for a few more minutes. read more

Pea, Bacon and Sundried Tomato Risotto

I love how a recipe evolves over time. Many risottos have been made in my kitchen over the years and I have to say a pea risotto has got to be one of my favourites. This recipe for pea, bacon and sundried tomato risotto is, in my opinion, the very best it can be. Other variations have included chorizo, fried speck, mint, goat’s cheese or spinach but this combination of ingredients gives such a variety and depth of flavour that is hard to beat.

ingredients

You will need (for two people):

  • 1 small onion, finely diced (preferably not a red onion)
  • 2 tbsp olive oil
  • 1 small garlic clove, crushed
  • 4 sundried tomatoes, finely chopped or sliced
  • 175g risotto rice
  • 500-600ml hot vegetable or chicken stock
  • 1 mug full frozen peas
  • Small knob of butter
  • 4 rashers smoked bacon, chopped
  • Salt and pepper
  • 25g Parmesan cheese, grated

method

Start by adding the oil and onion to a saucepan and frying gently for at least 15 minutes until the onion is softened and not coloured. Add the garlic and sundried tomatoes and continue frying for a few more minutes. read more

Smoked Pea and Potato Soup

There’s been a spate of soup recipes appearing on my blog recently. I’ll tell you for why: because there’s nothing more comforting I would like to have for lunch during the week. Sure, a steaming bowl of cauliflower cheese would be a fantastic winter luncheon but that’s more effort than I am willing to put in for what is effectively the most rushed meal of the week. So instead I take a bit of time at the weekend and batch cook some soup, freeze it and reap the rewards in the weeks to come. This Smoked Pea and Potato Soup is probably one of my favourite soups of all; all the salty, smoky tang as if it had bacon or ham in but it’s vegan. read more

Cauliflower and Sundried Tomato Pasta

I always think cauliflower is at its very best when served with cheese. As much as I think this is still true I have been really enjoying roasting and frying it lately and this cauliflower and sundried tomato pasta is my current favourite way to eat cauliflower. Cheap to make, vegan, delicious and so fast to cook; we’re talking 15 minutes from fridge to table. If only all weeknight cooking could be like this!

Ingredients

You will need (for four servings):

  • 300g pasta £0.30
  • 1 small romanesco (or other) cauliflower, chopped into small florets £1.50
  • 6 sundried tomatoes, finely chopped £0.30
  • 2 small garlic cloves, crushed £0.10
  • 3 tbsp extra virgin olive oil £0.15
  • Pinch saffron £0.50
  • Salt and pepper £0.02

Total £2.87

Method

You’ll need a pan full of boiling water with a steamer to go on top. It’s no problem if you don’t have a steamer; you’ll just need an extra pan of boiling water for the cauliflower. read more

Chipotle and Bean Soup

I really struggle to know what to have for lunch sometimes. Usually I am scrambling round in the cupboards trying to find some sort of suitable sandwich filling but I do get terribly bored of sandwiches. If I’m lucky I’ll have some keptovers to warm up and I do pay a visit to a local independent café from time to time too. Well enough is enough. I have decided to batch cook and freeze a range of healthy, filling, vegan soups; one of which is this Chipotle and Bean Soup. So that I can grab whichever soup I fancy and not have to think about what’s on the meal plan for dinner I am making them vegan, stuffed full of veg and flavour packed. I hate to have the same thing for lunch and dinner you see! read more

Autumn Vegetable Minestrone

The weather has certainly changed, although I do consider November to technically be in autumn things have started to get much wintrier. With ice in the mornings, digging scarves and hats out of the drawers and the fire blazing it’s definitely the time of year for soup. The more filling and comforting the soup the better and my autumn vegetable minestrone is exactly that; a restorative bowl of loveliness. Black Bean Quesadillas

I have made these black bean quesadillas a few times and I am always surprised how filling they are! They are deliciously full of black beans, spices and cheese and are really simple to make. You could add different beans, leftover chilli (or maybe leftover vegan chilli) and serve with your favourite dips. I love scooping up a big load of guacamole; but then I am a guacaholic. Sour cream, chilli sauce, salsa or whatever you like would be amazing on the side of these. One quesadilla each might not sound like a lot, but they are seriously filling. read more

Proper Ragu

There’s ragu, and then there’s proper ragu. You know the two kinds I mean; the quick one that we Brits chuck on top of a pile of spaghetti and the one that takes time, effort, care and attention to make. Don’t get me wrong, the former has its place but this recipe is for the latter; which incidentally freezes very well meaning it is perfect for cooking up a big batch and then reaping the rewards in the weeks to come. It has taken a long time to get this recipe to be my version of a perfect ragu so I hope you enjoy it. read more

Sesame Chicken with Miso Dressing and Roasted Vegetables

Meals which are healthy, filling, full of colour and flavour and balanced are what I try to aim for with my cooking…most of the time. I always seem to come back to the same combination of chicken with some sort of grain; it’s always a winner and none more so with my latest recipe. This sesame sesame chicken with miso dressing is wholesome, flavourful and just the ticket for some quick weeknight cooking.

Ingredients

You will need (for two):

  • 2 small chicken breasts
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp ground cumin
  • Salt and pepper
  • Oil for cooking
  • 2 tbsp sesame seeds
  • 150g brown rice
  • 1 small red onion, sliced
  • 2 carrots, peeled and chopped into small chunks
  • 2 tbsp white miso paste
  • Juice 1 lime
  • 125ml plain yoghurt

Method

Start by adding the onion and carrots to a roasting tray, drizzle over a little oil along with some salt and pepper and mix everything together well. Pop into the oven at 180C for 25-30 minutes or until soft and starting to brown at the edges. read more
