Pea, Bacon and Sundried Tomato Risotto

April 15, 2018 By All That I'm Eating 11 Comments

I love how a recipe evolves over time. Many risottos have been made in my kitchen over the years and I have to say a pea risotto has got to be one of my favourites. This recipe for pea, bacon and sundried tomato risotto is, in my opinion, the very best it can be. Other variations have included chorizo, fried speck, mint, goat's cheese or spinach but this combination of ingredients gives such a variety and depth of flavour that is hard to beat. ingredients You Read more

Chicken, Olive and Artichoke Stew with Risotto

January 13, 2017 By All That I'm Eating 11 Comments

I do like a tin of food. There's something very humble about tinned fruit and vegetables particularly; and I am not one to overlook anything that comes in a can. My favourite canned good of all is the artichoke. That's how this recipe for Chicken, Olive and Artichoke Stew with Risotto came about. Artichokes are very expensive, covered in oil (normally sunflower rather than nice olive oil) and quite small if you buy them chilled or in a jar; but in Read more

Purple Sprouting Broccoli and Mixed Mushroom Risotto

April 15, 2012 By All That I'm Eating 13 Comments

I do like purple sprouting broccoli. It seems less like broccoli than a standard green tree and so I feel I should pay it extra care and attention. As much as I enjoy a stem or two on the side of the plate sometimes I want it to be the star attraction. There was a lot of purple sprouting broccoli to get through; a whole bag full in fact from the veg box. One of the reasons I like purple sprouting so much is that it signals the start of Spring. Onion Squash and Blue Cheese Risotto

November 16, 2011 By All That I'm Eating 18 Comments

What is it about a squash that makes you warm from the inside out as you enjoy its beautiful sweet flesh. It could be the bright orange colour, a welcome sight amidst all the greens and browns of autumn. It could be the way it goes with pretty much everything: it can be soup, stew, curry, pudding; the list is endless, although I've not heard of anyone making squash gin or squash vodka. I had heard that the onion squash was the nicest of all the squashes Read more

Quick Cheat Risotto and Roasted Vegetables

October 1, 2010 By All That I'm Eating 6 Comments

Apparently I have become a magnet for books and other similar reading materials. Old and new, modern and traditional, there is not a manuscript that passes me by without a glance or sometimes a purchase. Because of this new exponential accumulation I needed to reorganise and rearrange my boudoir in preparation for a charming new bookcase I had clapped my eyes upon. I wrestled with the idea of what to have for dinner and I knew this rearrangement would Read more
