Beef and Chard Ramen

Cooking for one somehow seems more complicated than it should be. Even though it’s just a case of halving a recipe designed for two if I’m ever cooking for myself I often find myself opting for a slice of toast rather than anything more involved. But toast isn’t really that filling for dinner and no matter how much jam you spread on I’m not sure it’ll count as one of your five a day. That’s where this simple beef and chard ramen comes in. It is easy to scale up or down, you can use almost anything that you have in your kitchen and it doesn’t take much time to put together. read more

Sesame Chicken with Miso Dressing and Roasted Vegetables

Meals which are healthy, filling, full of colour and flavour and balanced are what I try to aim for with my cooking…most of the time. I always seem to come back to the same combination of chicken with some sort of grain; it’s always a winner and none more so with my latest recipe. This sesame sesame chicken with miso dressing is wholesome, flavourful and just the ticket for some quick weeknight cooking.

Ingredients

You will need (for two):

  • 2 small chicken breasts
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp ground cumin
  • Salt and pepper
  • Oil for cooking
  • 2 tbsp sesame seeds
  • 150g brown rice
  • 1 small red onion, sliced
  • 2 carrots, peeled and chopped into small chunks
  • 2 tbsp white miso paste
  • Juice 1 lime
  • 125ml plain yoghurt

Method

Start by adding the onion and carrots to a roasting tray, drizzle over a little oil along with some salt and pepper and mix everything together well. Pop into the oven at 180C for 25-30 minutes or until soft and starting to brown at the edges. read more

Moroccan Style Fish and Chips with Young’s

Who doesn’t love fish and chips? That classic British seaside dish, everyone has their favourite sauce or side to go with it; curry sauce, mushy peas, simple salt and vinegar or a good spoonful of tartare sauce. I’m a mushy peas and tartare sauce person I have to admit. When I started thinking about this recipe I wanted to make sure I kept the elements I love about those two sides but add in some influences from somewhere else. For my Moroccan Style Fish and Chips I’m using Young’s Chip Shop Cod Fillets, did you know they are the Nation’s favourite? This recipe is perfect for adding a bit of spice to a classic dish and it’s so easy to cook. read more

Batch Cooking Pizzas

When I make pizza there are no shortcuts. Making it all from scratch from fresh ingredients does take a little longer but it is so worth it, and, good news, batch cooking pizzas is so easy and they freeze really well. Most of the pizza preparation time is waiting for the dough to prove or the sauce to reduce so you can mostly leave it to itself and then reap the rewards in the weeks to come. Coming home and knowing that dinner will be ready in 20 minutes is even better when you know it’s a fantastic homemade pizza. read more

Spicy Sticky Chicken Skewers with Very Lazy

As you might already know I am a big fan of simple, straightforward cooking. I suffer from hangryness you see and when I get home on a busy weekday evening I want something full of flavour that can be rustled up in no time at all. So welcome my Sticky Chicken Skewers into your kitchen. They take just minutes to prepare and the whole meal (including potatoes and tomato salad) is on the table in well under 30 minutes. Just because it’s quick cooking doesn’t mean anything should be skimped on, it should still be full of quality ingredients and downright delicious. Word of warning though, you might walk round work all day with a very smug look on your face knowing you’ve got a great dinner to go home to when you get these on to marinate, do try and hide it. read more

Wild Garlic and Crispy Fried Salami Potato Salad

Meals that are made from a few simple ingredients are invariably some of my favourite dishes of all. A quick scramble around the cupboards and fridge pulling ingredients and ideas together always feels more satisfying; like you’re getting a meal for nothing. My evening meals are always planned in advance so it’s lunchtime where I get my Ready Steady Cook hat on. Sometimes however the scrabbling approach doesn’t yield any particularly tasty sounding results; ham and chocolate spread tostadas anyone? This time however, the combination of ingredients I had resulted in Wild Garlic and Crispy Fried Salami Potato Salad and it was brilliant. read more

Layered Ragu and Aubergine Pasta Bake

I think I’m part Italian. More likely, I like to think I’m part Italian. The reason for this recent realisation is that Italian food is the food I crave the most; when I’m looking for inspiration I invariably turn my attention to that most wonderful of countries. Pasta is the obvious Italian ingredient to inspire meals but the rice dishes, salads, marinades, stews, cheeses, meats and sauces always make me feel like I’m having a little Italian getaway in my own kitchen. This ragu and aubergine pasta bake was inspired by Rick Stein’s recent series: Long Weekends. I’m sure my recipe is very different to theirs, I’m bound to have forgotten some ingredients or added others, but the principle is the same; great big, hearty portions of food. It’s worth getting hold of some fontina cheese for this pasta bake (more on that later). read more

Slow Cooked Lamb Curry

This slow cooked lamb curry came about because I decided I was the proud owner of far too many spices. I hope it’s not just me that has drawers, jars and bags full of various spices. They were of course all originally bought for a specific recipe but some of them get used less often than others; I use a lot of paprika and cumin but not so much caraway or allspice. I’ve got three different types of dried chilli hanging around (ancho, chipotle, kashmiri) and pretty much every spice and spice blend imaginable. And I am committed to using them up. A great big curry or chilli is one way, marinades and rubs are another, soups, baking and all sorts. Watch out spice cupboard, I’m planning on emptying you out. read more

Fennel and Sausage Ragu

I won’t lie to you. This is not a dish that’s light on calories. But my word it is worth every one of them. My fennel and sausage ragu is exactly what the doctor ordered for mid-February. It’s full of good, hearty ingredients and it can’t fail to cheer you up from the inside out on a chilly evening. This dish is all about the sausages; the better the sausages you can get your hands on, the better the finished dish. Head to your local farmers’ market, butcher or farm shop to get hold of something spicy and Italian, they may be a little more expensive but trust me, you won’t regret it. read more

Vegetarian Fish and Chips (with Halloumi)

This is, probably, one of my absolute favourite meals I have ever made. Not only does it look glorious (excuse self-praising) but it is absolutely delicious. A vegetarian fish and chips if you will; a real rival to that classic seaside dish using halloumi instead of fish. With my recipe there is no crispy batter, however, the outside of the halloumi gets all crispy and wonderful so you really don’t miss it. Plus, as there’s no deep fat frying involved it’s much more suited to a weeknight dinner as there’s no faffing around. read more
