The thing I like most about these vegetable Singapore noodles is that you can throw in whatever you have left in the fridge at the end of the week. Add a few simple store cupboard staples and voila, dinner in 15 minutes. I have been perfecting this recipe for a little while now to get a good balance of sweet, salt and spice and by Jove I think I’ve cracked it. No more takeaways needed! You really can play around with this recipe too; try using different noodles or rice, different vegetables and nuts.
Sticky Soy Chard
Chard has such a fantastic earthy flavour and I love using it in all sorts of dishes. I used Swiss chard for this recipe but the rainbow variety would work just as well and look fantastic. My Sticky Soy Chard came about because I wanted to treat the chard exactly as I would treat bok choi; covering it in a savoury, sticky glaze. The chard plant itself does have a habit of getting a bit of mud stuck in the leaves so make sure you give it a good wash before you use it.

Slow Cooked Lamb Curry
This slow cooked lamb curry came about because I decided I was the proud owner of far too many spices. I hope it’s not just me that has drawers, jars and bags full of various spices. They were of course all originally bought for a specific recipe but some of them get used less often than others; I use a lot of paprika and cumin but not so much caraway or allspice. I’ve got three different types of dried chilli hanging around (ancho, chipotle, kashmiri) and pretty much every spice and spice blend imaginable. And I am committed to using them up. A great big curry or chilli is one way, marinades and rubs are another, soups, baking and all sorts. Watch out spice cupboard, I’m planning on emptying you out.
Three Easy Soup Toppings with New Covent Garden Soup
I like to look forward to my lunches; whether I’m using up some leftovers to make a quick salad, sticking all sorts of ingredients in a sandwich or slurping on soup. Sometimes it can be very tempting to just grab the quickest thing in the kitchen but if I do that I am invariably disappointed at lunch time. So say hello to my three easy soup toppings which can all be made in less than five minutes, using ingredients you probably already have and can be made in advance to enjoy at work.
New Covent Garden Soups are currently encouraging everyone to revive their lunch life, something I was really keen to get involved with as I think lunch can make or break a day. Below are my three easy soup toppings and the soups that I chose to serve them with. You can get creative and add any of the toppings to any of the soups and have a go at putting your own twist on them too.
Chocolate Rolled Oat Biscuits
Part biscuit and part flapjack, these Chocolate Rolled Oat Biscuits are a doddle to make. All mixed in one bowl and baked in one dish; minimum fuss and washing up, maximum baking satisfaction. I like that these biscuits aren’t too sweet and the generous amount of oats used means they are really filling. I’m not sure if they are technically a flapjack or a biscuit though; the lack of honey or golden syrup isn’t very flapjack-y but then the oaty flavour is so familiar it’s hard to believe it’s not a flapjack! I am sticking with calling them a biscuit on account of the crunch.
Chicken, Olive and Artichoke Stew with Risotto
I do like a tin of food. There’s something very humble about tinned fruit and vegetables particularly; and I am not one to overlook anything that comes in a can. My favourite canned good of all is the artichoke. That’s how this recipe for Chicken, Olive and Artichoke Stew with Risotto came about. Artichokes are very expensive, covered in oil (normally sunflower rather than nice olive oil) and quite small if you buy them chilled or in a jar; but in a can they can be half the price, bigger and once drained you get more for your money. So I wanted to make something comforting, filling and delicious and make the most of the wonderful artichoke.
Smoked Chicken Fried Rice
I bought some smoked chicken from a local farm shop. I wasn’t quite sure what I was going to do with it but it sounded too tasty not to try it. I planned to serve it with some cheese and chutneys but somehow I never got round to it. I certainly wasn’t going to waste it and I thought, rather than serving it alongside something else, why not make it the star of the dish? Smoked chicken fried rice sounded like just the thing for a simple, no hassle budget meal in a flash. Turns out it’s even better than it sounds.
Beef Stew with Horseradish Dumplings
I made this stew on New Year’s Day. I can’t think of many things as warming and comforting as a big bowl of slow cooked food. My beef stew with horseradish dumplings was made up of almost everything I had leftover in my fridge and cupboards; happily simmered away with some beef shin. A delicious, make-the-most-of-everything, homely stew for four people. Trust me on the ingredients; one or two may sound a little out of place but they really add to the dish.

Granny’s Oat Biscuits
When I was young I baked with my Granny at any opportunity. She’s got mad cooking skills and will beat anything together that looks like it’s not going to work, portion up a raw chicken to freeze in the blink of an eye and somehow manages to produce amazing food from seemingly nothing. Safe to say, she knows what she’s doing. However, we made these biscuits once together and, thanks to a timely phone call from my Mum, somehow both forgot to add any sugar to the dough. We made some very successful crackers but it wasn’t quite what we were aiming for. Almost 20 years later I thought it was probably time to give Granny’s Oat Biscuits another try.
Balsamic Roasted Vegetables and Lemon and Black Pepper Cod with Birds Eye
When I’m thinking of ways to treat myself in the middle of the week I like to try and make my life as easy as possible. I prefer to make things where everything is cooked together, or use the same tools. For example I would always try to steam any vegetables over potatoes or pasta that I’m cooking, or if I’m roasting something I try to put everything in the oven. That’s what this meal is all about; grabbing a few bits and bobs from around the kitchen and lifting a meal into something delicious. So, instead of going for a standard fillet of fish, I tried the Lemon and Cracked Black Pepper Lightly Dusted Cod from the Birds Eye ‘Inspirations’ range and works so well with sticky balsamic roasted veggies.
