Layered Ragu and Aubergine Pasta Bake

I think I’m part Italian. More likely, I like to think I’m part Italian. The reason for this recent realisation is that Italian food is the food I crave the most; when I’m looking for inspiration I invariably turn my attention to that most wonderful of countries. Pasta is the obvious Italian ingredient to inspire meals but the rice dishes, salads, marinades, stews, cheeses, meats and sauces always make me feel like I’m having a little Italian getaway in my own kitchen. This ragu and aubergine pasta bake was inspired by Rick Stein’s recent series: Long Weekends. I’m sure my recipe is very different to theirs, I’m bound to have forgotten some ingredients or added others, but the principle is the same; great big, hearty portions of food. Horseradish Celeriac Remoulade

I used to really dislike horseradish, I just didn’t understand why you would want to eat something that makes you pull a face similar to the one you would pull if someone trod on your foot. I had tried it before and had decided to avoid it at all costs from then on; until I ate some by accident in a mini Yorkshire pudding covered with rare roast beef and everything changed. If you’re like me and you’re also on Team Horseradish then you must try this recipe for horseradish celeriac remoulade. If you’re not a fan of the fiery root then just leave the horseradish out; it’ll still be tasty (just not quite the same). read more

Spanish Fennel Biscuits with Cream Cheese and Honey

When I was in Spain I ordered a dessert on the assumption that there had been a translation error on the menu. They can’t mean cheese ice cream, surely, they must mean cheeseCAKE ice cream, that’ll be delicious. Nope. Along came some cheese ice cream with a massive cracker on the side. What a revelation it was. The ‘cracker’ was actually a slightly sweet, very thin, fennel infused biscuit covered in sticky honey, which when dunked in the cheese ice cream was really rather delicious. I wanted to attempt something similar to this at home, so here are my Spanish fennel biscuits served with cream cheese and honey alongside some cracking fino sherry. read more

Vegetable Singapore Noodles

The thing I like most about these vegetable Singapore noodles is that you can throw in whatever you have left in the fridge at the end of the week. Add a few simple store cupboard staples and voila, dinner in 15 minutes. I have been perfecting this recipe for a little while now to get a good balance of sweet, salt and spice and by Jove I think I’ve cracked it. No more takeaways needed! You really can play around with this recipe too; try using different noodles or rice, different vegetables and nuts. read more

Sticky Soy Chard

Chard has such a fantastic earthy flavour and I love using it in all sorts of dishes. I used Swiss chard for this recipe but the rainbow variety would work just as well and look fantastic. My Sticky Soy Chard came about because I wanted to treat the chard exactly as I would treat bok choi; covering it in a savoury, sticky glaze. The chard plant itself does have a habit of getting a bit of mud stuck in the leaves so make sure you give it a good wash before you use it.

Slow Cooked Lamb Curry

This slow cooked lamb curry came about because I decided I was the proud owner of far too many spices. I hope it’s not just me that has drawers, jars and bags full of various spices. They were of course all originally bought for a specific recipe but some of them get used less often than others; I use a lot of paprika and cumin but not so much caraway or allspice. I’ve got three different types of dried chilli hanging around (ancho, chipotle, kashmiri) and pretty much every spice and spice blend imaginable. And I am committed to using them up. A great big curry or chilli is one way, marinades and rubs are another, soups, baking and all sorts. Watch out spice cupboard, I’m planning on emptying you out. read more

Double Chocolate and Orange Cookies

After double, these cookies could only be improved by making them triple; perhaps a drizzle or dunk of white chocolate on each. As they stand however, my Double Chocolate and Orange Cookies are just splendid as they are. Especially straight from the oven. The smell as they bake is hard to beat. I like to use dark chocolate when making cookies as sweet as these because I think it adds some welcome bitterness. When it comes to rolling the cookies, for reasons I am not sure of, I always seem to manage to end up with thirteen; a perfect baker’s dozen. read more

When it’s a weekday and you come back from work to cook dinner, I’m assuming it’s not just me, you actually just want to relax. The cooking should be straightforward, ideally with minimal washing up and the food should be tasty, filling and balanced. I’ve been adding more and more recipes to my weeknight repertoire that are just that; minimum fuss, maximum flavour and ideally ready in under 30 minutes. Baked Aubergine, Halloumi and Tomato Mashed Potato

Sundried tomatoes, paste and pesto always hang around for a bit in my kitchen. I never seem to use a whole tub or jar so am left with trying to find different ways to use them up. And why not mix them with mashed potato! This Baked Aubergine, Halloumi and Tomato Mashed Potato is really rather very good; especially when you get a forkful of everything at once. Great for using up a few odds and ends too and you could easily stretch this to feed four people just by adding an extra aubergine and a few more potatoes. read more

Harissa Chicken with Quinoa, Avocado and Mango Salad

How many times do you think about what to make for dinner and end up with a seemingly impossible list of requirements for that one meal? It needs to be filling, but without being too full of fat, tasty without being too salty or sugary, balanced and preferably something interesting. Welcome to every weekend of my life! Planning meals is something I can’t live without (see post here if you want some top tips) and I usually do it on a leisurely Sunday morning when I have time to look through my blog, magazines and books for inspiration. More often than not I end up fulfilling all the requirements that I want my dinner to be, but it takes time to work it out.
