Salmon Nicoise Quiche

This quiche is full of vegetables and that is a great way to disguise the fact it’s actually got double carbs in. Potatoes AND pastry; who doesn’t love that? My salmon nicoise quiche is a great way to take leftovers to another level. I made the nicoise salad, so everything was prepped and cooked, and then assembled the quiche the next day. Served alongside some mustard flecked dressed lettuce, this is a perfect lunch for me.

Delicious served warm from the oven you can slice this nicoise quiche into portions and freeze them individually, ready to be defrosted and warmed up another day. read more

Smoked Salmon and Broccoli Quiche

I used to think of quiche as a dull, beige pastry which got wheeled out from old cookery books from time to time and no one was particularly fussed about it. Turns out I was wrong. It’s a most excellent pastry. I cooked my smoked salmon and broccoli quiche a few weeks ago, divided it up and froze it in wedges. Now I’m working from home I love to have something interesting for lunch. When it’s quiche day, it’s the best day of the week.

The freshness of the broccoli and spinach combined with the flavourful smoked salmon is a winning combination. It feels rather luxurious to have it for lunch. read more

Baked Eggs with Spinach and Cheddar

Also known as eggs en cocotte this is a classic recipe and one I can’t believe I’ve never made before! My baked eggs with spinach and cheddar take no time at all to make; it’s on the table in under 15 minutes. Don’t be fooled though, this simple recipe is seriously luxurious and packed with comforting flavours.

Once your fork (or spoon!) hits that runny yolk it mixes with the soft spinach, melted cheese and double cream and it is truly a joy to eat. The egg white should be just set and the yolk still runny. They are delicious served on their own but served with some crusty bread for dipping you really can’t go wrong. read more

Nduja and Broccoli Pizza

There were two things I discovered I loved when I was in Italy. The first was nduja (if it was on a menu, I was having it) and the second was broccoli on pizza. It seemed, to me, a very good idea to combine the two in a nduja and broccoli pizza. With cooler evenings starting now a seriously spicy, warming pizza made from my favourite ingredients is my idea of the perfect dinner.

Nduja is a Sicilian spreadable salami with an unbelievable amount of chilli in. It almost glows red when you see it. As the nduja is used in the sauce here, rather than as a topping, it gives a warmth and depth of flavour to the whole pizza. The creamy mozzarella does quieten the powerful nduja down a little and the freshness of the broccoli finishes everything off so well. Served with a fresh salad I think this is one of the finest pizzas I have ever made. This is enough pizza for four but we eat it between two. Because we’re greedy. read more

Blackcurrant Frangipane Tart

I can’t say no to blackcurrants; whatever they are in I will like it. They have such a distinctive flavour and when I found some at the market I had to set about making a blackcurrant frangipane tart. This tart is a marriage of two of my favourite things: blackcurrants and sweet almond frangipane.

The best thing about this tart comes from using raw blackcurrants. As they cook in the frangipane filling they burst and become sweet and sticky. The blackcurrants retain their sharp berry flavour but taint the tart with splashes of deep purple impromptu jam. With autumn just around the corner I can’t think of anything else I would rather spoon into my face. read more

Honey Cake

There’s honey, and then there’s honey. I like all of it but my preference is for local honey. Delicious in so many recipes I wanted to make the honey the star of the dish; so I set about baking a honey cake.

At a market recently I tried some different honeys from a local producer. Not only were they different to each other, and commercial honeys, in colour and texture but the taste was out of this world. I chose the wildflower honey and remembered I had wanted to bake a honey cake for a while. The name ‘honey cake’ conjures up images of fine summer picnics in the garden, tall glasses of lemon barley water and sounds like you imagine it tastes. read more

Peach and Cherry Crumble

Whenever peaches are in season I always plan to cook something with them. More often than not though I just end up eating the peaches from the fruit bowl because they’re irresistible. Not this time! My peach and cherry crumble is so deliciously summery and the colour of the fruit once it’s baked is divine. I’m so glad some of the peaches survived to make this crumble.

The delicate white flesh of the peaches combines so well with the vibrant red of the cherries. As the fruit was really ripe I only added a small amount of honey as that’s all it needed. Don’t skimp on the lemon, it brings a much needed sharpness to the crumble. We enjoyed this as it is but it would be even better with a dribble of double cream. read more

Meatball Pasta Bake

Just look at that cheese. All melted and stringy just waiting for you to stick a fork in. My meatball pasta bake combines two of my favourite comfort foods: meatballs in a rich tomato sauce and cheesy pasta. It’s almost like pizza meets meatballs meets pasta bake; and it’s all the better for it if you ask me.

Frying the meatballs off first and then making the sauce in the same pan gives the tomato sauce a brilliant depth of flavour. I love the herb flecked meatballs, the richness and fragrance of the tomato sauce (thanks to the fresh basil) and the soft creaminess of the mozzarella. The family agreed; this meatball pasta bake was devoured in minutes. read more

Smoked Bacon and Kale Soup

There’s something special about watching the steam rise from a hot bowl of soup after you’ve been working in the garden all morning; you just know it’s going to fill you up. My smoked bacon and kale soup came about simply to use up some ingredients in the kitchen. I cooked up enough for six portions so there’s plenty in the freezer for a wet and windy day. We have rather busy weekends and when lunchtime comes it’s nice to stop, take some time and eat something nourishing. read more

Easy Vegetable Lasagne

Easy Vegetable Lasagne after baking

There’s a very good reason why this is an easy vegetable lasagne: there’s no béchamel! One of the things I love most about lasagne is how comforting it is, all those layers of pasta and sauce, so I didn’t want to miss any of that by cutting out a few steps. It’s still creamy and cheesy but only uses one sauce. This is such an easy recipe and you can use whatever vegetables you have to hand.

ingredients

You will need (for four portions):

  • 1 onion, roughly chopped
  • 1 aubergine, roughly chopped
  • 2 peppers (whatever colour(s)) you like, seeds removed and roughly chopped
  • Handful cherry tomatoes, halved
  • Any other vegetables you like, such as courgette, carrot, etc. prepared and roughly chopped
  • 2 garlic cloves, peeled and crushed but left whole
  • Olive oil for cooking
  • Salt and pepper
  • 600ml passata
  • 200ml crème fraîche
  • 1 tbsp red pesto
  • 25g Parmesan, grated

Method

Start by preheating an oven to 180C.

Put all of the prepared vegetables onto a baking tray and drizzle over enough oil to give everything a light covering. Add a little salt and pepper and give everything a good mix with your hands. read more
