Bergamot Lemon Drizzle Cake

Lemon drizzle has got to be up there with my most loved cakes. If there was a line up of carrot, lemon and chocolate caramel cake I’d be hard pushed to decide which to have, and, let’s be honest probably try to find a way to get a slice of each. You may have been following my bergamot adventures and it would have been silly not to bake a bergamot lemon drizzle cake as it combines two of my favourite things in one: tea (bergamot from Earl Grey) and, well, cake.

You will need:

  • 250g butter, softened
  • 250g caster sugar
  • 4 large eggs
  • 250g self raising flour
  • Zest from one bergamot lemon
  • Juice from two bergamot lemons
  • 3 tbsp caster sugar

Line a loaf tin with greaseproof paper and preheat the oven to 180C. I always use an independent thermometer in my oven, it’s such a liar. read more

Beetroot, Lentil and Bergamot Lemon Salad

I’ll be honest, salads don’t tend to excite me very much. Don’t get me wrong, I appreciate the freshness a few leaves bring on the side of something else but as a standalone dish, it’s not really for me. However, things have changed and I’ve started to make, what I would call, more ‘bulky’ salads. This particular combination of beetroot, lentil and bergamot lemon is so colourful and combined with a bit of goat’s cheese is equally good warm or cold.

Aubergine, Butterbean, Pesto and Gnocchi Bake with Sacla

Pasta bake has got to be one of the best comfort dishes going. Plenty of carbs smothered in tomato, cheese or cream sauce with all sorts of lovely other bits in there; bacon or mushrooms being my favourite. For me a pasta bake is normally a weekend dish as it takes a bit of time to make, however, this recipe using gnocchi takes only 45 minutes from start to table and is mighty tasty and super simple too. Mini Cheesecake Mess with The Laughing Cow

I love cheesecake. This recipe for mini cheesecake mess is a great way of using up almost anything sweet you’ve got hanging around and, if I do say so myself, look pretty cute too.  A lovely little sweet treat for lunch or after dinner. Have you ever tried to make cheesecake (or cream cheese icing) with low fat soft cheese? It never seems to work for me and just ends up all runny and no good at all. I thought I’d give it a try with some Laughing Cow Extra Light to see if that would work, and use up some leftover festive food in the cupboards, and I was so pleased with how they turned out! read more

Hang on, a sausage roll that doesn’t have any sausage in it? Correct. I absolutely love a proper sausage roll; when the juices run out of it and caramelise under the flaky pastry. To pack a picnic with a couple of sausage rolls and a flask of tea is to pack a fine picnic as far as I’m concerned. So what’s with this vegetarian creation? Spaghetti with Balsamic Tomatoes, Mozzarella and Olives

Spaghetti with Balsamic Tomatoes, Mozzarella and Olives

Sometimes you end up with all sorts of bits and pieces in your fridge; half a bit of something there, a few nibbly bits leftover here and I find these little pieces a great source of inspiration. This recipe is a speedy one which makes use of a few ingredients I can find in my fridge more often than not. Lovingly referred to as ‘pasta with fridge bits’ this particular version was a delicious Spaghetti with Balsamic Tomatoes, Olives and Mozzarella.

Ingredients

You will need (for two):

  • 10-12 cherry tomatoes, halved
  • 1-2 tbsp balsamic vinegar
  • 1 tbsp olive oil
  • Salt and pepper
  • ½ tsp dried thyme
  • 175g spaghetti
  • 1 ball mozzarella, torn into smaller pieces
  • Small handful olives, roughly chopped
  • Small handful fresh basil, large stalks removed, roughly chopped
  • 1 tbsp extra virgin olive oil

Method

Preheat an oven to 200C. Put the cherry tomatoes into an oven proof dish in a single layer. Drizzle over the vinegar, olive oil, thyme and salt and pepper. Put the tomatoes into the oven for 20 minutes. read more

Blackberry and Pear Pavlova

This is only my second pavlova. To me, meringue has always been steeped in mystery and wonder and I found it slightly intimidating. Crispy on the outside, gooey in the middle; is this all really achievable with just two ingredients? Well yes, turns out it is. Summer Green, Smoked Bacon and Potato Bake

Potatoes, sliced and baked with cream have to be one of the best things ever. At least in my opinion. Maybe a little bit of garlic, or some sliced onion, even some smoked bacon added for extra deliciousness. Although undeniably tasty they always feel more suited to the colder months than in the middle of summer. Don’t worry though, I’ve found a way round this; and I had a swanky new baking dish to try out. By adding some summer greens and using a lighter sauce my summer green, smoked bacon and potato bake fills that dauphinoise hole perfectly. read more

Some people bake bread when it rains. I bake whatever contains as much butter and sugar as possible to cheer myself up. I’m not a big fan of rain. I made cookies once before when I was much younger and they didn’t exactly work out like they were supposed to; I made one very large, thin cookie.
