Baked Vacherin Mont D’or with Rosemary Flatbreads

I do like a bit of cheese. Sometimes it’s best with crackers and pickles, sometimes it’s best melted onto or into something but then there are those times where you bake a whole cheese and then spoon it all out, all runny and lovely, mostly into your mouth and somewhat on the table. I’m not sure why I associate a Vacherin Mont D’or with Christmas but it doesn’t get much better than warm, melted, faintly garlicky cheese scooped out with delicious homemade (and quick) bread.

Ingredients

You will need (for two):
1 Vacherin Mont D’or (or Camembert)
1 clove garlic

250g strong white bread flour
1 tsp fresh chopped rosemary
1/2 tsp salt
60ml extra virgin olive oil
100ml water

Method

Mix together the flour, salt and rosemary. Mix in the olive oil and water. Using your hands, bring it all together into a ball then knead on a floured surface for a few minutes. Set it to one side for a few minutes more.

Preheat an oven to 200C. Slice the garlic and then cut slits in the top of the cheese. Put the slices of garlic into the cheese and then put into the oven for around 10 minutes. read more

Gnocchi with Broccoli, Toasted Walnuts and Blue Cheese Sauce

Apparently we are due for one of the coldest winters ever; don’t they say that every year though? Either way it’s the same story for me; thick socks, snuggly jumpers and consuming an astonishing amount of cheese. When you’re having to defrost your car windscreen every morning the thought of coming home to a nice salad just doesn’t quite cut it. What is needed is lots of stodge; carbohydrates, cream and cheese. Dauphinoise is a classic choice but it’s not quite a meal. So to fulfil this instinctive desire for filling food, on a budget for four people, this gnocchi with broccoli, toasted walnuts and blue cheese sauce is perfect.

Ingredients

You will need (for four):
2 500g packs of gnocchi (not the refrigerated ones)

1 head broccoli, cut into small florets
£0.80
1 small onion, finely chopped
£0.10
Oil or butter for frying
£0.02
300ml double cream
£1.10
150g creamy blue cheese (I used Blue Monday)
£1.20
75g walnuts, roughly chopped
£0.85
Salt and pepper
£0.02
Total
£5.39

Method

Start by getting a frying pan on a low to medium heat and adding a glug of oil or knob of butter. Add the onion and fry slowly for around 20 minutes or until softened but not browned. While the onion is frying get another small frying pan on a medium to high heat. Add the chopped walnuts and toast them in the dry pan for a few minutes until you can smell they are toasted. Watch them carefully though as they can burn easily. Put to one side when done. When the onion is around five minutes from ready bring a large pan of salted water to the boil. Add the broccoli and boil for two to three minutes.

When the onion is soft, pour in the cream and stir frequently until it just starts to simmer. 

Add the gnocchi to the pan with the broccoli and continue to boil for one to two minutes more or until the gnocchi floats to the top.

Crumble the blue cheese into the cream sauce, reduce the heat to its lowest setting and stir frequently.

Drain the broccoli and gnocchi and put to one side.

Ensure the cheese has melted into the cream and then add plenty of black pepper. Taste the sauce and add a little salt if needed; it will depend how salty your cheese is. read more

Chicken Tikka Wraps with Cucumber and Onion Salsa

I wanted to make something with meat for my next frugal recipe but I didn’t want to compromise on the quality of the chicken I decided to use. I bought two free range chicken breasts from my local farmers’ market as they are much more reasonable than buying them anywhere else. In order for this recipe for four to cost less than £6 the chicken needed to be bulked out with plenty of other bits. Enter the wrap; it looks like it’s not that filling but after just two of them I am stuffed! This recipe is fresh, vibrant and full of flavour and makes a light, quick and easy meal.

Ingredients

You will need (for four):
2 free range chicken breasts

2 tbsp tikka paste

150g organic natural yoghurt

1/2 large lettuce

1/2 cucumber

1 small red onion
£0.10
Small handful fresh coriander
£0.15
8 wraps
£1.00
Salt and pepper

Oil (for frying)
£0.02

Method

Start by slicing the chicken breasts into thin, inch sized pieces. Put these into a bowl with the tikka paste and 1 tbsp of yoghurt. Mix together and then cover and leave in the fridge to marinate for at least 30 minutes.

While the chicken marinates prepare the rest of the meal.
Wash the lettuce and drain well before shredding it.
To make the salsa finely chop the cucumber and the onion. Put half of the onion and all of the cucumber into a bowl. Tear in the coriander and then mix it all together with some salt and pepper. Put this to one side.

When you are ready to cook the chicken get a large frying pan on a medium heat. Add a little oil and the other half of the chopped onion. Fry the onion for around five minutes to get a little colour then add the chicken and all the marinade.
Continue to fry it all together for around ten minutes or until the chicken is cooked and some of the edges of the chicken have started to catch. Leaving the chicken to catch really adds to the flavour. read more

Caribbean Spicy Bean Burgers with Pineapple Chilli Sauce

I have been thinking for a while about posting some ‘themed’ recipes on here. The food I eat at home is rarely expensive so I know that almost everything I cook is reasonably priced. This means I can then buy the organic or free range versions of ingredients without breaking the bank. Most of the reason I eat cheaply is because I mostly cook vegetable based meals. If I do have meat I use cheap cuts, or less of it, but I do very occasionally have a fillet steak blowout. A new outlook for me recently is that humble doesn’t have to be hum drum. Hence the first in a new series of blog posts which coincide with my new Saturday morning radio slot on BBC Radio Berkshire (very excited!) where I will create tasty, easy recipes to feed 4 people for £6 or less. First up, these Caribbean spicy bean burgers.

Ingredients

You will need (for four):

For the burgers –
2x 400g cans of mixed beans, drained £1.58
50g breadcrumbs £0.30
2 tsp ground allspice £0.10
Few sprigs thyme, leaves only £0.10
1 egg £0.35
3 spring onions, sliced £0.35
Salt and pepper £0.02
For the pinepple sauce –
1x 227g canned, chopped pineapple in juice £0.43
125g caster sugar £0.19
175ml water £0.00
4 tbsp white wine vinegar £0.18
2 garlic cloves, crushed £0.05
1/2 scotch bonnet chilli, roughly chopped £0.08
2 tsp cornflour £0.03
Salt and pepper £0.02
4 crusty white rolls £1.20
Total £4.98

Method

Put the drained beans into a large bowl and roughly crush them with a masher or the back of a spoon.
Add all the remaining burger ingredients, except the egg, and thoroughly mix together.
Taste the mixture to check the seasoning and when you are happy crack in the egg, mix well and then form into burger shapes.
Put to one side while you make the pineapple sauce.

Drain the pineapple and then put into a saucepan with all the remaining ingredients except the cornflour.
Bring the mixture to the boil, stirring occasionally, and boil for around five minutes.
Mix the cornflour with a little water to make a paste and then mix this into the sauce.
Bring the mixture back to the boil then remove from the heat.
Blend the pineapple sauce until mostly smooth but with some pineapple chunks still left.
Put to one side to cool down. read more

Baked Blackberry Cheesecake

You know when you go out blackberry picking you end up eating pretty much all of them and have nothing to show for it when you get home? As much as it is very hard to resist keeping any of the berries for later I thought it would be well worth the effort for a sort of hidden gem baked blackberry cheesecake. Beneath the pillowy layers of soft cheese you can find little bits of sweet, purple fruit. I didn’t have to save too many either as you only need a handful for this recipe. They do say that picking blackberries in October isn’t a good idea as the devil is meant to have peed on them. If you feel like living on the edge then by all means take the risk; if not, a quick trip to the shops should sort you out.

Ingredients

You will need:

  • 180g digestive biscuits
  • 75g butter
  • 600g cream cheese
  • 220g caster sugar
  • 150g sour cream
  • 3 eggs
  • 3 tbsp. plain flour
  • Large handful blackberries

Method

Line the base of a 20cm spring form cake tin. Spring form is your friend for this.
Preheat an oven to 130C.

Crush the digestive biscuits in a bowl; I like to use the end of my rolling pin as it’s immensely satisfying. Melt the butter and mix this into the biscuits.

When the biscuits and butter are well combined press the mixture into the bottom of the cake tin and then chill in the fridge.

Whisk together the cream cheese and sugar then mix in the sour cream.

Add the eggs one at a time then add the flour. read more

Millionaire’s Tart

Baking is something I save for one of two occasions; a rainy day (classic excuse) or a day where my eyebrows have been almost continuously furrowed. With the return of the Great British Bake Off on our screens I felt it was high time I got out my scales and greaseproof paper to make something truly indulgent. Well if you’re only going to bake occasionally then why make something healthy? Millionaire’s Tart is possibly my favourite tart of all time. Also, I wanted to make sure that I could retain my pastry skills to ensure I avoided the dreaded soggy bottom.

Ingredients

You will need (for a 20cm tart):

For the pastry –

  • 220g plain flour
  • 120g butter (I used salted)
  • Cold water
  • 1 can dulce de leche

For the chocolate topping –

  • 200g high cocoa chocolate
  • 150ml double cream
  • 25g salted butter
  • Sea salt, I really like Cornish Sea Salt for this as I think it has a lovely clean flavour

I was so impressed with how my pastry case turned out I felt I needed to provide evidence that I had made it myself!

Method

Make the pastry by rubbing the butter into the flour until you have a breadcrumb texture then bring the mixture together into a dough using a little cold water.

Knead the dough lightly on a floured surface then roll out and line a 20cm tart tin.

Cut or roll off the excess and prick the base with a fork. read more

Elderberry and Einkorn Scones

I think it’s fair to say that autumn has arrived. I feel like I made the most of summer this year so I welcome the autumn with much more gusto than usual. It’s been a very long time since I had an apple or a pear so I am looking forward to getting my hands on some fine specimens at the farmers’ market or when I’m lucky enough to find a fruitful tree. Until then I have elderberries to tide me over. 

I’ve been waiting for the elderberries to come out this year as I have a hawk’s eye when it comes to finding the elderflowers so I knew where to start to find what I was looking for. I picked these elderberries on a drizzly day and perhaps a week or so sooner than I should have done as there were a fair few green berries I had to pick out.

The birds had already had their share of the berries so the first few stops were a bit thin on the ground. By the time I had found enough we were pretty damp but the rain can easily be ignored when your foraging companion ever so kindly offers to put you on their shoulders so that you can reach the very best berries; much more fun than scrabbling around in the depths of a thicket. read more

Lime Macerated Cherries with Caramelised Brioche

Considering how much I like cherries I don’t get the chance to eat very many of them. I have never had much success with a supermarket cherry preferring to take my chances at the farmers’ market where I might be lucky to nab a punnet if I am early enough. The cherries used for this spontaneous dessert were earned by my own fair hand. I was meandering through the market, deliberating how many doughnuts were too many for breakfast, when I was called to help one of the stall holders who couldn’t fill enough punnets to keep up with demand. My reward for much scooping was a big punnet of cherries all to myself.  

Ingredients

You will need (for two):

  • 300g cherries, de-stoned
  • 1 tbsp caster sugar
  • Juice 1 lime
  • 2 slices brioche
  • Butter
  • Demerara sugar

Method

I quite like de-stoning cherries. I find it a therapeutic thing to do and once you get into the swing of things it takes no time at all. I have to admit that my fingers were stained for days afterwards which is not something I’ve ever encountered with cherries before. Put the de-stoned cherries into a bowl with the caster sugar and lime juice and then leave to macerate overnight. Remove the cherries from the fridge an hour or so before you want to eat them so that they are at room temperature. Lightly toast the brioche and then spread generously with butter. Sprinkle over a little demerara sugar and then put under a grill so that the sugar lightly caramelises. Remove from the grill and top with the cherries.

For an impromptu dessert I was pretty pleased with this. The cherries create their own sweet and sour juice which soaks into the sweet bread. It’s crunchy at the edges and gooey in the middle. The lime freshens everything up and the cherries were a lovely shade of deep crimson which looked great on top of the sugar topped bread. Perhaps it was because these were free cherries, maybe it was because I had to work for them but there was something a bit more special about this sweet treat than normal. read more

Sticky Toffee and Date Cake from Baked In

Back in July I was at a food festival and got talking to a company called Baked In. They sell the dried ingredients you need to make a cake, all pre-weighed and ready to go. They asked me if I’d like to give one of their mixes a try, the sticky toffee and date was calling out to me so I grabbed a bag and headed off looking forward to putting on my apron. Since then we have had some very lovely hot weather and baking on a hot day wasn’t appealing to me; I’d much rather be outside in the sun. Last week however there was a rainy day last week which was the perfect time to get baking!

Ingredients

You will need (for one finished cake):

  • 1 sticky toffee and date cake mix
  • 1 egg
  • 125g unsalted butter
  • 175ml boiling water

Method

The instructions were really easy to follow and the kit contained everything including a butter measurer, a skewer to test doneness and baking paper. It smells lovely when you open the bag too thanks to the fresh vanilla in the sugar.

You start by greasing and lining a 20cm x 20cm tin and preheating the oven. The pre-weighed dates are mixed with boiling water to soften them. The sugar is mixed with butter before the flour is added. The egg and date mix is added after that. I’ve not made a cake with that method before but it worked a treat and was really easy to mix up. This goes into the oven for around 30 minutes. read more

Broad Beans and Goat’s Cheese on Toast

Things on toast, no matter whether they are cheese, beans or mushrooms make a fantastic, easy and fast dinner. I think something on toast has a humble feel about it; it’s simple and satisfying. However, humble doesn’t have to be hum drum. I had a pile of broad beans and had bought some soft goat’s cheese for another meal, but, after a hectic day I wanted something quick and filling: beans on toast. Well, sort of.

Ingredients

You will need (for two slices):

  • 2 large handfuls of broad beans in the pod
  • 2 spring onions
  • A few sprigs of basil
  • 1 tbsp olive oil
  • Salt and pepper
  • Soft goat’s cheese
  • 2 slices of good quality white bread

Method

Start by removing the beans from their pods. When you have a pile of pale green beans, put them into some lightly salted boiling water for around four minutes.
Drain the beans when cooked and then run them under cold water to stop them cooking. When they have cooled down, remove the grey skins from each bean. It sounds like effort but it’s honestly just a quick insertion of a finger nail on one side and a gentle squeeze on the other. They just pop right out.

Finely chop the spring onions and roughly chop the basil. In a bowl mix together the beans, spring onions, basil, olive oil and a little salt and pepper.
Toast the bread and then spread the goat’s cheese thickly onto each slice and top with the bean mixture. read more
