Who doesn’t love fish and chips? That classic British seaside dish, everyone has their favourite sauce or side to go with it; curry sauce, mushy peas, simple salt and vinegar or a good spoonful of tartare sauce. I’m a mushy peas and tartare sauce person I have to admit. When I started thinking about this recipe I wanted to make sure I kept the elements I love about those two sides but add in some influences from somewhere else. For my Moroccan Style Fish and Chips I’m using Young’s Chip Shop Cod Fillets, did you know they are the Nation’s favourite? This recipe is perfect for adding a bit of spice to a classic dish and it’s so easy to cook.
How To Do A Weekly Meal Plan
I have been writing my meal plans for a few years now and I often get asked how to do a weekly meal plan. Speaking to friends a few weeks ago they said they would all love to use meal plans but had either lost a bit of inspiration with what to cook or thought they would struggle to come up with ideas. When it comes to actually putting pen to paper, or finger to screen, it can seem there are so many things to consider that it’s hard to know where to start. Don’t worry though, this post is all about how I started doing meal planning and how, over time, I have wasted much less food, saved time in the kitchen and really expanded my cooking repertoire. And you can too.
Rosemary and Garlic Butter Halloumi
Say the word halloumi around other people and pretty much all of them will say, “I love halloumi” and then lick their lips. Well, I count myself as one of those people and I’ve got news for you. Rosemary and garlic butter halloumi takes your squeaky cheese to a whole other glorious level. Let’s be frank, shove some garlic butter on anything and it’s instantly better. Note – ‘anything’ does not include bruises or grazes, missing wall or floor grout or use as shampoo and face cream; shoving garlic butter in any of those places will be of no help to you whatsoever. Delicious, full fat, dripping in butter, full of flavour is what we’re looking for here, those of a healthy disposition look away now.
Batch Cooking Pizzas
When I make pizza there are no shortcuts. Making it all from scratch from fresh ingredients does take a little longer but it is so worth it, and, good news, batch cooking pizzas is so easy and they freeze really well. Most of the pizza preparation time is waiting for the dough to prove or the sauce to reduce so you can mostly leave it to itself and then reap the rewards in the weeks to come. Coming home and knowing that dinner will be ready in 20 minutes is even better when you know it’s a fantastic homemade pizza.
Vegan Afternoon Tea at Careys Manor Hotel
This was a gifted meal.
I do love a good afternoon tea, everything about it just demands some time out to properly sit back, enjoy and relax. There have been a few occasions where I’ve slightly overindulged on the clotted cream I have to admit. I was invited to try the new vegan afternoon tea available at Careys Manor Hotel; I was really looking forward to trying it and was really curious to see the desserts most of all!
Careys Manor is just outside Brockenhurst in the New Forest so we spent the morning wandering around the Blackwater tall trees trail; a collection of some of the tallest and oldest trees in Britain. We then wandered over to the Blackwater arboretum to walk the sensory trail and see trees from all around the world. Both of which are free to get into and to park at.
Tomato Baked Feta
Feta’s not just for salads you know. I enjoyed something similar to this tomato baked feta while in Greece a few years ago; I needed to try and make it at home. I have previously posted about some Greek inspired feta and tomato spaghetti (which is delicious by the way) and the key to both of those dishes is using the best tomatoes and feta you can get your hands on. In this case it’s also about baking the tomatoes perfectly; not too hot so that they dry out and not too cool so that they turn into mush.
Spicy Sticky Chicken Skewers with Very Lazy
As you might already know I am a big fan of simple, straightforward cooking. I suffer from hangryness you see and when I get home on a busy weekday evening I want something full of flavour that can be rustled up in no time at all. So welcome my Sticky Chicken Skewers into your kitchen. They take just minutes to prepare and the whole meal (including potatoes and tomato salad) is on the table in well under 30 minutes. Just because it’s quick cooking doesn’t mean anything should be skimped on, it should still be full of quality ingredients and downright delicious. Word of warning though, you might walk round work all day with a very smug look on your face knowing you’ve got a great dinner to go home to when you get these on to marinate, do try and hide it.
Tomato and Mascarpone Gnocchi Bake
I think this is a perfect meal in many ways: firstly, it’s just the right size for two people; secondly, it’s really simple to make; thirdly, it’s deliciously vegetarian and full of veg and lastly, it’s really versatile. My tomato and mascarpone gnocchi bake is made from a few ingredients which I often have in the kitchen anyway. Just the thing for a busy Monday night when you want something quick and tasty. You could add anything to it that you had hanging around in your cupboards, maybe some olives, sundried tomatoes, leftover chicken or roasted veg or you could pop some cheese on top.
New Little Treats
I don’t want to speak too soon and scare the sunshine away but it might actually now be summer. I’ve been trying out some lovely new little treats that are great for summer snacking and are easy meal additions. I always find myself eating lighter in the summer months, but I don’t just mean calories. Lighter flavours, colours and textures are always welcome at this time of year and these products I’ve been trying fit into that perfectly.
First up I tried some pots from Coconut Collaborative. Called Little Temptations these lemon and coconut pots are great mini desserts; I’ve actually been taking them to work or having one for breakfast instead of yoghurt. All the products made by Coconut Collaborative are, funnily enough, coconut based meaning they are vegan. I really liked the combination of lemon and coconut flavour in these pots and the size was just perfect for me. Also, not only are they dairy free they are also helping the farmers that grow the coconuts and planting more trees. A guilt free treat indeed! 4 pots £2 available from large retailers.
Squash and Chickpea Tagine
This is actually surprisingly quick to make and I normally have some or most of these ingredients in the kitchen so it’s a great recipe to keep coming back to. My squash and chickpea tagine is a great way to use up some spices and a few tins from the cupboard. The fennel and paprika aren’t perhaps the most traditional tagine ingredients but I really think they add to the sweet squash and earthy chickpeas. If you roasted the squash before adding it I think it would be even tastier. Try and find apricots that aren’t completely dry, when they’re still a little soft they have a beautiful honeyed flavour. A few toasted flaked almonds on the top would give a lovely crunch to the dish.
