Quince and Apple Pie and a Pastry Lesson

Pastry has to be, without doubt, the best cradle, blanket or hat for any rich, sumptuous bed of fruit, meat or vegetables. It is that crunch, that warmth and that way it crumbles which makes it just so. I thought of pastry as my nemesis. Stupid stuff that was invariably delicious when prepared by anyone but myself. All this was to change when I met Jane. 

Jane makes an awful lot of pastry. She is Jane of Jane’s Kitchen and prepares a marvellous amount of amazing pastry each week for different farmers’ markets around the area. There are trout and caper parcels, Moroccan mountains, seasonal fruit tarts and some classic pies. Best of all Jane uses as many ingredients as possible from the farmers’ market. 
A few weeks ago I asked Jane if she would be kind enough to share some of her pastry knowledge with a complete and utter pastry dunce – me. She was more than happy to share her wisdom and I can now pass on this wisdom to anyone else who counts themselves as a pastry novice.  read more

Damson and Apple Crumble

Crumble is the food I turn to when the evenings start getting darker and it starts getting cooler. Especially this damson and apple crumble. The way the sweet, slightly tart fruit of choice bubbles and seeps through the crunchy, crumbly, biscuity top is a sure fire way to warm you from inside to out. What I love about crumble is that it’s so versatile; the fruit is whatever fruit you can get your hands on.  I think that a person’s crumble is as unique as their fingerprint. Some crumbles are like a great wave of shortbread on top of the fruit, some are all big and little bits scattered willy nilly all over the place, some add extra sugar on the top, some add nuts and some add oats. Whatever your crumble style, it’s your own.    Recently I bought some damson jam out of politeness at a local market. I don’t even like jam. When I got home I wondered what on earth I was going to do with it. I got some crusty white bread, some soft unsalted butter and a dollop of the damson jam and it was a revelation. I’m ashamed to say that the loaf and jar were consumed in one sitting. What have I been missing out on all these years? It turns out I do like jam but was left wondering where damsons had been all my life.  When I noticed some lovely damsons outside my local greengrocer I just had to have them – I’d run out of jam for one thing. They were crying out to be made into a crumble. As I didn’t have that many of them I added an apple to make it go a bit further and add a little sweetness. This damson and apple crumble was absolutely fantastic. The damsons add such richness and gorgeous colour, the apple is just detectable in the background giving it a lovely homely feel. This crumble had extra caramelised bits on the edges of the dish and peeling them off and chewing them has to be one of the most enjoyable things there is. If you’ve not had damsons before or are unsure how to deal with them then I urge you to give this a try. Crumble is such a tried and tested favourite, how could it go wrong?

Top Tips

Just like the crumbliness of your crumble is rather personal, so is what you choose to serve the crumble with. Cream, custard or ice cream? If you go for cream is it single, double, Gold Top or clotted? If custard, ready made or home made? If ice cream should it be vanilla with or without vanilla seeds or should it be clotted cream ice cream? It’s all very complicated and someone will always be upset no matter which you choose. I always opt for cream because I can stir it all together in the bowl and pretend I’m 8 years old again.  read more

Purple Cauliflower Cheese

When you have a cauliflower and you add a little cheese you can’t fail to make something unfathomably gorgeous. There is no other place I know of that you can get a purple cauliflower apart from my local farmers’ market. If you saw it at a glance you may have to do a double take to reassure yourself that it is real. 

I think the cauliflower is a very lucky vegetable. It’s no looker but I’m yet to meet someone who doesn’t think the union of cauliflower and cheese is glorious. Being purple as opposed to its equally delicious, much paler, white cousin adds something extra to what might otherwise have been a beige overload on the side of the plate.  read more

Lemon Drizzle Cake

There have been cakes in my past which I tried either when I was too young to appreciate them or they were a mass produced poor version of what is actually a beautiful cake. An example of this is carrot cake. What I thought carrot cake tasted like was nothing compared to when I made one for myself; it wasn’t dry it was moist, it wasn’t boring it was luscious and the icing is by far my favourite of all icing. 

Another cake I had always ignored was lemon drizzle cake. Ones that I had tried were too sticky, not lemony or had so much icing you could have waded through it. This was my unshakable opinion and I wouldn’t touch it with a barge pole, until I made it myself. read more

Purple French Beans with Steak

Purple French Beans

I planted eighteen broad bean seeds under their little cloches back in March and I had eighteen successful broad bean plants come up giving me lovely green pods all of July and early August. I planted eighteen French purple bean seeds under their little cloches and I had two plants come up. I’m not sure it was my year for these little chaps.

Fortunately the two little plants that managed to battle the elements (and the neighbours heavy pawed cat) were rather heavily laden and so I had enough to make a meal. They are such a dark colour and look so lovely in the garden it was a shame to pick them. The plant is also a fantastic purpley green.  read more

Blackcurrant Summer Pudding and Red Gooseberry Fool

Summer is a wonderful time for unctuous puddings. Sweet ones, sharp ones, gooey ones and normally in some shade of pink. I wish I had the willpower to buy millions of summer berries and freeze them so I can knock up a pudding anytime I fancy, but I can barely resist them enough for them to make it to the saucepan. How can you go wrong with inky blackcurrants and vibrant gooseberries? Over the weekend I had occasion to make luscious puddings with both of these fruits. First a slightly sweet, sticky blackcurrant summer pudding and then a sharp, creamy gooseberry fool.  read more

Broad Bean, Bacon and New Potato Salad

Mini Bubble and Squeak

As one of those people who would rather sit down and pick at fifteen different dishes instead of a complete meal a BBQ is perfect for me. I wish I had the energy to create authentic Tapas on a regular basis but until then I am finding all sorts of little things to throw into the standard BBQ line up. 

Potatoes will always crop up in some form or other at a BBQ. Chips, baked, in salads, boiled and any other form you can find. I wanted something that hit the potato spot but that was also a little different; mini bubble and squeak. As usual, this dish is made from ingredients I get from my local farmers’ market. I call these mini bubble and squeak but call them potato cakes or what you will. They have potato, a hint of onion, a bit of earthy cabbage with a golden, crispy, salty outside and delicate white fluffy middle…what more could you want? read more

Baked Asparagus with Bacon and Cheese

As asparagus is only around for a short time, it’s a good thing it’s so versatile. This is another recipe combining classic ingredients in a really easy, quick way.
 
You will need a bunch of asparagus, 4 or 5 rashers of bacon and a good handful of strong cheese.
 

Start by placing the asparagus stem down in a pan of boiling water for 4-5 minutes. By placing them stem down the thicker, woodier stems are boiled while the fragile tops steam. While the asparagus boils, cut the bacon into pieces and fry. read more

Classic Asparagus and Hollandaise Sauce

I had been waiting and waiting until the asparagus turned up at the Farmers’ Market and last weekend it finally did. I had heard whispers and rumours that this fine vegetable had pushed its purple head through the soil but didn’t want to get my hopes up until I saw it with my own eyes.

The first asparagus of the year I always find is the best. It comes at just the right time, after the snowdrops and daffodils have been out, as an indication that Spring has sprung. Its lovely flavour and delicacy has to be enjoyed, at least once in the short asparagus season, with the classic partner…Hollandaise sauce.  read more
