Chicory, Walnut and Pomegranate Salad with Walnut and Clementine Dressing

At this most wonderful time of year I would estimate that I’m around 10% booze, 20% pastry, 40% cheese, 10% bacon wrapped sausages and 20% mince meat. It’s not a good look. The thought of tucking into a cucumber really doesn’t appeal to me. Not at all. No. If I am in need of some cleansing and a break from all the indulgence it still has to be in keeping with the season. Hence walnuts, clementines and pomegranates all become great mates through the vehicle of chicory.

Ingredients

You will need (for 2 as a light main, for 4 as a side):
2 chicory heads
Small handful walnuts
1/2 pomegranate
2 tbsp walnut oil
1 tbsp extra virgin olive oil
1 clementine
Salt and pepper

Method

Chop up the chicory so you have individual leaves. Arrange these on a large plate so everyone can dig in.

Roughly chop the walnuts and toast these in a dry frying pan. Once toasted sprinkle these over the chicory.

Bash the seeds out from the pomegranate (or whatever method you choose) and add these to the salad.

Mix together the walnut and olive oil then squeeze in the juice of the clementine. Stir through some salt and pepper before pouring the dressing over the salad. read more

Damson Gin, Lychee and Champagne Cocktail
As much as it’s lovely to have plenty of ideas for food to cook with a festive feel you can’t very well just make do with mulled wine for the month of December. No indeed. At some point in my life I went from having no spirits in the house to being on the verge of opening a drinks emporium. It seems to have crept up on me (I’m sure it has to everyone) and I have all sorts of odds and ends to do something with. The brandy is being used to make sloe or damson port but the four different gins I have going on need to be used up. It’s getting ridiculous.

Ingredients

You will need (per drink):

37.5ml damson (or sloe) gin
1 lychee from a can plus 3 tsp of the syrup
Champagne to top up

Method

It’s not particularly complicated but who can be bothered with all that exuberant shaking when you’ve just eaten a disgraceful amount of roast potatoes?

Pour the gin into a glass; over ice if you’d like. Plonk the lychee in with the syrup then top it up with Champagne.

You might want to play around with this recipe a little; if your gin is particularly sweet or sharp you may need a little more or less lychee syrup. read more

Baked Vacherin Mont D’or with Rosemary Flatbreads

I do like a bit of cheese. Sometimes it’s best with crackers and pickles, sometimes it’s best melted onto or into something but then there are those times where you bake a whole cheese and then spoon it all out, all runny and lovely, mostly into your mouth and somewhat on the table. I’m not sure why I associate a Vacherin Mont D’or with Christmas but it doesn’t get much better than warm, melted, faintly garlicky cheese scooped out with delicious homemade (and quick) bread.

Ingredients

You will need (for two):
1 Vacherin Mont D’or (or Camembert)
1 clove garlic

250g strong white bread flour
1 tsp fresh chopped rosemary
1/2 tsp salt
60ml extra virgin olive oil
100ml water

Method

Mix together the flour, salt and rosemary. Mix in the olive oil and water. Using your hands, bring it all together into a ball then knead on a floured surface for a few minutes. Set it to one side for a few minutes more.

Preheat an oven to 200C. Slice the garlic and then cut slits in the top of the cheese. Put the slices of garlic into the cheese and then put into the oven for around 10 minutes. read more

My 12 Recipes of Christmas

I have always made a small nod to festive recipes but have never gone particularly all out, tinsel everywhere, baubles all over the shop type thing. The truth is I’m too busy humming carols, doing a bit of sewing (it’s the only time of year I attempt to get crafty) and generally being the anti-Scrooge to devote much time to creating new recipes.
This year however, I am very excited to present my 12 recipes of Christmas. There are no roast turkeys, no bubbles or squeaks and no curry leftover recipes. No, these 12 recipes are the things that will suit your festive plans no matter what. There’s ideas for party food, light meals, a take on a mince pie and some drinks too.
So whether you’re planning on being Elvis or Bing I hope there’ll be something to wet your whistle (I wish there was some jingle bell alternative I could slip in there).
Starting on December 1st and continuing every other day until the 23rd I’ll be popping up a recipe. Savoury, sweet, indulgent or light there’s a right old mix. It’s just like the song, the 12 Days of Christmas, except that it’s all edible. Enjoy! read more

White Chocolate and Rose Truffles
Last year for Valentine’s Day I posted a three course meal; Beetroot and Goat’s Cheese Risotto, Boeuf Bourguignon and Dark Chocolate Tart. They were great together for a lovely meal in but this year I wanted to make something a little romantic and very indulgent. I know Valentine’s recipes will be two a penny at the moment but my truffles are a bit different. Not least because they’re not heart shaped and look rather plain and innocent. Until you bite into one that is.  What is that in the middle of the truffle I hear you ask? Well, as love is in the air, it’s a small pink nod to St. Valentine in the form of a pomegranate seed. A nice bit of fresh texture in an otherwise melty, mellow mouthful. It takes barely any effort to put the pomegranate seed inside each one and makes such a difference to the end flavour and texture it is definitely worth it.

You will need (for around 25 truffles):
300g white chocolate
150ml double cream
25g butter
Splash rose extract (preferably not rose water)
1 pomegranate
100g white chocolate – for dipping

Start by chopping the 300g of chocolate into small chunks. Heat the double cream and butter together until hot but not boiling. Pour this over the chocolate and mix well until the chocolate has melted and it’s all nicely combined. Add a drop of rose extract, mix well and then try it to see how floral it tastes. If you’re a bit overenthusiastic with your dripping technique the end result might taste reminiscent of soap. Not really what you’re going for. read more

Mulled Wine and Orange Jelly

I feel a little left out at the moment. Everyone is having a Christmas party of some sort or other and I have never been to one. I’m not sure how it’s different to any other kind of party other than people adorning some questionably festive earrings and the subtle background music involving an alarming amount of sleigh bells. Christmas Spiced Tea

I rather like tea. There are times where no matter how terrible the situation a cup of tea can remedy it in an instant. If the first cup doesn’t work then you move onto a mug. If the mug is failing to turn that frown around then you move onto a larger receptacle. And so on and so forth until the only solution is to fill a bath tub with warm tea and have a little soak. That way you’ve got the best of both worlds.

No matter what the tea there is always an appropriate occasion for it. For example I would start the day on a strong single blend, have an Earl Grey in the afternoon and a fresh green tea in the evening. Each to their own I reckon. Over the festive period I find my tea consumption reduced in favour of mulled wine, sloe gin and hot chocolate. Of course, I don’t start pouring gin over my cornflakes but you get the picture. In order to feel festive and start wading through the mountains of tea I have acquired over the last few months it was time to try making a Christmas tea. read more

Cranberry, Cointreau and Clementine Sauce

Christmas cannot be a cranberry free zone; this versatile berry can be paired with both sweet and savoury things. Not only is this fruit a great all rounder but it makes itself into a sauce in no time. As the cranberry transforms so simply into a sauce it lends itself to interference, by you, to turn it into something new and exciting. This recipe is for my cranberry sauce with Cointreau and clementine which is extremely delicious when used as a mini pie filling, or, as I like to call them: festive puffs.

You will need (for the cranberry sauce):
200g cranberries
80g sugar
50ml water and 50ml clementine juice, mixed together
Splash Cointreau

Put all the ingredients into a pan and cook for five minutes until the cranberries start to burst. If it looks a like there’s a little too much moisture (I find cranberries to vary a lot in their water content) then cook for a few minutes more to evaporate some of the water. Put the cranberry sauce into a bowl and leave to cool. I’m not sure it gets much simpler and this sets to a lovely dolloping consistency. read more

An Autumn Picnic 3 of 3: Caramelised Pears with Crumbled Parkin

A picnic must always have something sweet to round it off; a jam tart or two, some chocolate biscuits or even a slice of cake. This being an autumn picnic meant that the sweet must have a seasonal feel. Pears were an obvious choice but you can’t finish a picnic with just a pear that would be akin to having a carrot instead of a birthday cake. No, these pears needed some warmth and caramelised pears seemed just the ticket. 

Parkin is a traditional cake eaten on Bonfire Night so I made some a few days before the picnic as I had heard it is a cake better left before eating. This would be the perfect accompaniment to the warm gooey pears. read more

An Autumn Picnic 2 of 3: Garlic Butter Mushroom Burgers

By now those picnic attendees that are left will be crying out for some sustenance and these garlic mushroom burgers really hit the spot; they are warm, juicy and full of flavour. There are several reasons why I chose to use mushrooms rather than meat: you don’t need to take an extra pan, minimum effort is required for delicious results and I think they are actually nicer! Also they sit happily on the BBQ needing barely any attention so you can get on and enjoy the picnic without having to stand and watch over them.


You will need:

4 large mushrooms Garlic butter (butter, garlic, parsley and black pepper) 4 bread rolls

I prepared the butter before I left by crushing three garlic cloves into about 50g butter and mixing it together with a few sprigs of chopped parsley and some black pepper.
Take the mushrooms and wrap them (gill side up) in some foil so they are completely covered. Put the parcel onto the edge of the BBQ, so it is not directly over the heat, and leave them to soften in their own juices for about 20 minutes. When they are soft put a little of the garlic butter onto the mushroom gills and leave the parcel open so that some of the moisture evaporates. After about five minutes toast the buns on the BBQ and put a mushroom in each bun. read more
