Cranberry and Pistachio Chocolate Truffles

December 16, 2014 By All That I'm Eating 5 Comments

I can find it hard to know what to give people for gifts. When I’m not sure I normally cook or make something for them instead; it’s personal and I quite enjoy doing it. This is the other recipe that I developed for Kenwood (see crumble here) and I think they look a bit like Brussels sprouts if you stand far enough away (and squint). My recipe for Cranberry and Pistachio Chocolate Truffles is really simple and I find I usually have these ingredients Read more

Cranberry and Clementine Crumble

December 12, 2014 By All That I'm Eating 9 Comments

I love cranberries and really try to make the most of them when they are around; they are almost fool proof when it comes to making jams and jellies as they are so full of pectin. This Cranberry and Clementine Crumble is a great way to use cranberries in a different way over the festive period and the addition of Cointreau adds a little something extra. I was asked to come up with a couple of wintry recipes as part of a project with Kenwood. I used Read more

Christmas Couscous

December 15, 2013 By All That I'm Eating 10 Comments

Around every corner there seems to be some sort of turkey and cranberry and/or stuffing sandwich. All those crazy festive sandwich fillings come out now for us to enjoy in an intense but short space of time; some more questionable than others. It seems you can put almost anything in a sandwich; I'm waiting for one to come out with a Brussels sprout and mincemeat filling. It is nice to be able to take in all the flavours of Christmas in one mouthful Read more

Spiced Turkey Mini Meatballs with Chillied Cranberry Sauce

December 9, 2013 By All That I'm Eating 11 Comments

Although not my favourite meat you can't very well ignore a turkey at this time of year. I'm not going to be cooking a whole turkey (there's only two of us!) so instead, to make a nod to this festive bird, I made these spiced turkey meatballs. They are great with the chillied cranberry sauce. This recipe does have a whiff of a turkey curry about it but it's an ideal dish to make for party finger food. Ingredients You will need (for a good platter Read more

Cranberry, Cointreau and Clementine Sauce

December 9, 2012 By All That I'm Eating 26 Comments

Christmas cannot be a cranberry free zone; this versatile berry can be paired with both sweet and savoury things. Not only is this fruit a great all rounder but it makes itself into a sauce in no time. As the cranberry transforms so simply into a sauce it lends itself to interference, by you, to turn it into something new and exciting. This recipe is for my cranberry sauce with Cointreau and clementine which is extremely delicious when used as a Read more

  • New recipe on the blog! These chicken thighs are the stickiest yet. A mix of soy, chilli, honey and a few other ingredients. So delicious and the cooking juices in the tray are fantastic over a noodle salad. • Does three count as a ‘wake’ of red kites? I love all the ridiculous collective terms we have for birds. Apparently a collection of red kites can be called a wake, a roost or a kettle! A beautiful afternoon for a walk and these three seemed to be enjoying the change in weather. #redkites #countryside #winterskies #outforawalk #wiltshire #redkite #birdsofprey
  • It’s been a while since my last veg box. I stocked the freezer up so well we’ve been working our way through that for weeks with only a few UFOs (Unidentified Frozen Objects) to contend with. What a sight these were this morning, bright greens and reds, a very knobbly celeriac along with red onions and potatoes. That pak choi is asking to go into Friday’s hibachi fried rice and the celeriac to be served mashed with spuds on Sunday. Perhaps some loc lac for lunch to make use of the tomatoes, lettuce and onions. The broccoli is destined for weekend mac and cheese. @riverford #organic #veg #allthatimeating #eattherainbow #organicveggies #wintereats
  • I made some Kanelbullar after a trip to Sweden. Served warm from the oven with fresh coffee they are the best! You can find the recipe over on the blog, just search ‘Kanelbullar’ or ‘Cinnamon’. You can use cardamom instead of cinnamon for these if you prefer.
