Smoked Salmon and Broccoli Quiche

I used to think of quiche as a dull, beige pastry which got wheeled out from old cookery books from time to time and no one was particularly fussed about it. Turns out I was wrong. It’s a most excellent pastry. I cooked my smoked salmon and broccoli quiche a few weeks ago, divided it up and froze it in wedges. Now I’m working from home I love to have something interesting for lunch. When it’s quiche day, it’s the best day of the week.

The freshness of the broccoli and spinach combined with the flavourful smoked salmon is a winning combination. It feels rather luxurious to have it for lunch. read more

Nduja and Broccoli Pizza

There were two things I discovered I loved when I was in Italy. The first was nduja (if it was on a menu, I was having it) and the second was broccoli on pizza. It seemed, to me, a very good idea to combine the two in a nduja and broccoli pizza. With cooler evenings starting now a seriously spicy, warming pizza made from my favourite ingredients is my idea of the perfect dinner.

Nduja is a Sicilian spreadable salami with an unbelievable amount of chilli in. It almost glows red when you see it. As the nduja is used in the sauce here, rather than as a topping, it gives a warmth and depth of flavour to the whole pizza. The creamy mozzarella does quieten the powerful nduja down a little and the freshness of the broccoli finishes everything off so well. Served with a fresh salad I think this is one of the finest pizzas I have ever made. This is enough pizza for four but we eat it between two. Because we’re greedy. read more

Broccoli Stalk and Sesame Soup

Ingredients for broccoli stalk soup

If you’re chopping the florets off the broccoli and throwing away the stalk you’re missing out. The stalk has that delicious broccoli flavour and can be used in so many ways. My broccoli stalk and sesame soup recipe is one of the things I like to use the stalks for but you can also chop them finely and add them to stir fries, pasta dishes and roasted veg.

Ingredients

You will need (for four portions):

  • Oil for frying
  • 1 onion, roughly chopped
  • 1 celery stick, roughly chopped
  • Broccoli, a mix of stalks and florets around 350g
  • 1 garlic clove, roughly chopped
  • 400ml hot vegetable stock
  • Salt and pepper
  • 1 tbsp toasted sesame seeds
  • Sesame oil for drizzling

Method

Start by adding a little oil to a large saucepan over a medium heat.

Add the onion and celery to the pan and fry for five minutes until the vegetables are starting to soften. read more

Chargrilled Broccoli, Potato and Pesto Salad

It was one of those evenings. You know the ones, where you look in the fridge expecting a sudden moment of inspiration and the fridge just stares blankly back. I’d put something down on the meal plan but for one reason or another didn’t manage to cook it; sometimes I forget to buy an ingredient or I use it all in another meal forgetting to save any for later in the week. My potato, chargrilled broccoli and pesto salad came out of seemingly nowhere. This meal’s saviour turned out to be a little pot of pesto; it transformed a sorry looking collection of vegetables into a rather tasty meal.

ingredients

You will need (for two):

  • 2 large handfuls new potatoes
  • 1 small head broccoli
  • Small handful green beans, sliced diagonally
  • 3-4 tbsp pesto (fresh from a deli or homemade if you like). You could use a vegan pesto to make the meal vegan
  • Small handful pine nuts
  • 2 handfuls washed rocket

method

Start by scrubbing the potatoes and then chopping them into halves or quarters depending on their size and how you like them. Leaving them a little larger just means they will take a little longer to cook. Put the potatoes into a pan of cold salted water and bring the pan to a boil, then reduce to a simmer. Simmer until cooked through.

Chop the broccoli into small florets and pop them in a steamer over the potatoes for 1-2 minutes until bright green but still crunchy.

Get a griddle pan onto a medium/high heat and tip the broccoli in. Keep the broccoli moving occasionally but allow it to get chargrilled at the same time.

Re-use the same steamer and pop the green beans above the potatoes for the last few minutes of the potato cooking time.

Drain the potatoes and green beans and put to one side.

Put a small frying pan onto a medium heat and add the pine nuts, moving them round the pan often until they are toasted.

Mix the broccoli and pesto into the potatoes and beans and then serve up with the rocket and top with the pine nuts.

The chargrilled broccoli adds such a great flavour to this salad, if I was having a barbecue I’d definitely try the broccoli on there before mixing into the salad. This is a really hearty and filling dish and would be a great side but I enjoyed it just on its own. A few halved cherry tomatoes, some leftover chicken or salmon would be delicious additions and would probably leave you enough for lunch leftovers the next day.

Sausage, Broccoli and Spinach Pasta

Using sausages when making a pasta sauce is a great way to add depth and flavour to the sauce and cut down on cooking time too. My most recent recipe creation came about because I had one too many broccoli heads in the fridge; so my sausage, broccoli and spinach pasta was born. I used some delicious Italian sausages for this which were flavoured with plenty of herbs and a little fennel. The spinach was added as an afterthought but actually I really liked the earthiness it brought to the dish.

Ingredients

You will need (for 6 portions, it freezes well):

  • 1 onion, finely sliced
  • 6 Italian sausages
  • 2 cloves garlic, crushed
  • Pinch dried chilli flakes
  • 1 head broccoli, cut into small florets
  • 150ml chicken or vegetable stock
  • Handful fresh spinach, roughly chopped
  • Salt and pepper
  • Olive oil for cooking

Method

Start by adding a little oil to a large frying pan on a medium heat. Add the onion and fry for 10 minutes or so until softened.

Squeeze the sausage meat from the skins into the frying pan. Fry the sausage and onion together until the sausage is cooked through and starting to turn golden brown. Break the sausage meat down with a wooden spoon while it cooks.

Add the garlic and chilli to the pan and fry for another minute or two.

Tip in the broccoli and stir everything together well then add the stock and pop a lid on the pan.

Bring the pan to a boil then remove the lid and let it reduce to a thick sauce. Add the spinach for the last minute or so of cooking.

Cook the pasta according to pack instructions while you’re waiting for the pasta sauce.

Drain the pasta and season the pasta sauce then mix everything together and serve up.

I like how some of the broccoli breaks down and some stays in larger pieces and it gets really mixed through the sauce. The spinach ends up all silky and the chilli adds the tiniest bit of warmth to the sauce but it’s by no means spicy. Depending on which sausages you use the sauce will taste different so it’s a great excuse to play around with all sorts of flavours. If you mixed this with a little tomato or béchamel sauce I reckon it would make a spectacular pasta bake.

Easy White Bean Stew and Purple Sprouting Broccoli - All That I'm Eating

Wholesome food always makes you feel good; it’s made from humble ingredients and is full of good things like beans, vegetables and whole grains. I normally eat slow cooked, what I would describe as wholesome, meals in the autumn and winter but this easy white bean stew with purple sprouting broccoli is the perfect dish for this time of year. It’s quick and easy to make, is full of seasonal vegetables and is absolutely delicious. Using seasonal veg not only makes the best of what’s around but means it’s super cheap to cook up too, feeding four people for around £4.50 (most of what I used was organic too!).

Ingredients

You will need (for two hearty bowls):

  • 1 large leek, sliced £0.40
  • 2 cloves garlic, finely sliced £0.10
  • Olive oil for cooking £0.10
  • 2 carrots, diced £0.10
  • 2 bay leaves £0.05
  • 2 cans cannellini beans, drained £1.30
  • 500ml vegetable stock £0.30
  • Handful fresh parsley, roughly chopped £0.20
  • Purple sprouting broccoli, woody ends removed (4-5 stems each) £1.75
  • 1 lemon £0.30
  • Salt and pepper £0.05

Total price £4.65

Method

Get a casserole pan on a medium heat and add a little oil. Stir the garlic in and stir briefly before adding the carrots, leek and bay leaves. Add a dash of water (2-3 tbsp is all) then leave everything to soften for around 10 minutes.

Add the beans and stock and then simmer everything for 10-15 minutes with a lid half on.

Fill a pan with a steamer with a little water then get it on to boil.

Check the stew, it should be like a thick soup, you can add a little water if you need to thin it out then season with salt and pepper. Remove from the heat and keep warm. Stir through the parsley.

When the water is boiling steam the broccoli for 2 minutes then remove and squeeze over the juice from the lemon and a good grinding of black pepper.

Serve with nice crusty bread.

This is one of my favourite dishes and one that I can see myself returning to again and again. It’s also vegan, which I realised afterwards so if you’re looking to expand your vegan cooking repertoire then I can recommend this as an excellent place to start! It’s lovely to have the seasonal purple sprouting broccoli as the star of the dish and the acidity the lemon brings cuts through the comfort of the bean stew. I also normally have some sort of white bean in my cupboards and I think it would work with any of them. If you make double the amount it’s also very tasty served as a soup the next day. I would advise serving this with crusty bread so you have something to mop up the juices from the stew. read more

Broccoli Cheese – Tenderstem in 10 challenge

With all the miserable weather it seemed positively autumnal but it’s not the time for stews, long bakes and comfort food. You may have seen my broccoli pesto post last week; it was a good dinner, marvellous in fact, but I was left with another pack of broccoli. Another meal in under 10 minutes using less than 10 ingredients needed to be devised for the Tenderstem challenge.

I wanted to make something recognisable and filling, healthy and indulgent and of course quick and simple. After much head scratching I was almost at the point of deciding that I was ridiculous and almost opted for a broccoli sandwich when I changed my mind. Thank goodness I did; imagine how soggy a broccoli sandwich would be, no amount of condiments could cheer that up. read more

Broccoli, Walnut and Blue Cheese Pesto – Tenderstem in 10 challenge

Broccoli is a brilliant vegetable but occasionally I find myself at a loss for what to do with it. It’s great with spices, superb with salty soy and oyster sauce and phenomenal with blankets of cheese. So when the kind people from Tenderstem asked if I was interested in taking part in their challenge I gladly accepted; a chance to really think outside the box.

The challenge was to make a meal using the Tenderstem broccoli using less than 10 ingredients in less than 10 minutes. I felt like a Ready Steady Cook contestant. I received a lovely parcel which contained the broccoli as well as a kitchen timer to keep me on track! read more

Purple Sprouting Broccoli and Mixed Mushroom Risotto

I do like purple sprouting broccoli. It seems less like broccoli than a standard green tree and so I feel I should pay it extra care and attention. As much as I enjoy a stem or two on the side of the plate sometimes I want it to be the star attraction. There was a lot of purple sprouting broccoli to get through; a whole bag full in fact from the veg box. One of the reasons I like purple sprouting so much is that it signals the start of Spring. Along with rhubarb, when you see the purple tipped stems standing proud you know it’s only a matter of time until ‘the other stuff’ starts appearing; asparagus, beans, fruits, tomatoes and all sorts of other treats. read more
