Millionaire’s Tart

September 29, 2013 By All That I'm Eating 25 Comments

Millionaire's Tart with Salted Chocolate - All That I'm Eating
Baking is something I save for one of two occasions; a rainy day (classic excuse) or a day where my eyebrows have been almost continuously furrowed. With the return of the Great British Bake Off on our screens I felt it was high time I got out my scales and greaseproof paper to make something truly indulgent. Well if you’re only going to bake occasionally then why make something healthy? Millionaire’s Tart is possibly my favourite tart of all time. Also, I wanted to make sure that I could retain my pastry skills to ensure I avoided the dreaded soggy bottom.

Ingredients

You will need (for a 20cm tart):

For the pastry –

  • 220g plain flour
  • 120g butter (I used salted)
  • Cold water
  • 1 can dulce de leche

For the chocolate topping –

  • 200g high cocoa chocolate
  • 150ml double cream
  • 25g salted butter
  • Sea salt, I really like Cornish Sea Salt for this as I think it has a lovely clean flavour

I was so impressed with how my pastry case turned out I felt I needed to provide evidence that I had made it myself!

Method

Make the pastry by rubbing the butter into the flour until you have a breadcrumb texture then bring the mixture together into a dough using a little cold water.

Knead the dough lightly on a floured surface then roll out and line a 20cm tart tin.

Cut or roll off the excess and prick the base with a fork. read more

Elderberry and Einkorn Scones

September 14, 2013 By All That I'm Eating 25 Comments

Einkorn flour for scones with elderberries
I think it’s fair to say that autumn has arrived. I feel like I made the most of summer this year so I welcome the autumn with much more gusto than usual. It’s been a very long time since I had an apple or a pear so I am looking forward to getting my hands on some fine specimens at the farmers’ market or when I’m lucky enough to find a fruitful tree. Until then I have elderberries to tide me over.

I’ve been waiting for the elderberries to come out this year as I have a hawk’s eye when it comes to finding the elderflowers so I knew where to start to find what I was looking for. I picked these elderberries on a drizzly day and perhaps a week or so sooner than I should have done as there were a fair few green berries I had to pick out.

The birds had already had their share of the berries so the first few stops were a bit thin on the ground. By the time I had found enough we were pretty damp but the rain can easily be ignored when your foraging companion ever so kindly offers to put you on their shoulders so that you can reach the very best berries; much more fun than scrabbling around in the depths of a thicket. read more

Lime Macerated Cherries with Caramelised Brioche

August 19, 2013 By All That I'm Eating 22 Comments

Toasted Brioche with Lime Macerated Cherries
Considering how much I like cherries I don’t get the chance to eat very many of them. I have never had much success with a supermarket cherry preferring to take my chances at the farmers’ market where I might be lucky to nab a punnet if I am early enough. The cherries used for this spontaneous dessert were earned by my own fair hand. I was meandering through the market, deliberating how many doughnuts were too many for breakfast, when I was called to help one of the stall holders who couldn’t fill enough punnets to keep up with demand. My reward for much scooping was a big punnet of cherries all to myself.

Ingredients

You will need (for two):

  • 300g cherries, de-stoned
  • 1 tbsp caster sugar
  • Juice 1 lime
  • 2 slices brioche
  • Butter
  • Demerara sugar

Method

I quite like de-stoning cherries. I find it a therapeutic thing to do and once you get into the swing of things it takes no time at all. I have to admit that my fingers were stained for days afterwards which is not something I’ve ever encountered with cherries before. Put the de-stoned cherries into a bowl with the caster sugar and lime juice and then leave to macerate overnight. Remove the cherries from the fridge an hour or so before you want to eat them so that they are at room temperature. Lightly toast the brioche and then spread generously with butter. Sprinkle over a little demerara sugar and then put under a grill so that the sugar lightly caramelises. Remove from the grill and top with the cherries.

For an impromptu dessert I was pretty pleased with this. The cherries create their own sweet and sour juice which soaks into the sweet bread. It’s crunchy at the edges and gooey in the middle. The lime freshens everything up and the cherries were a lovely shade of deep crimson which looked great on top of the sugar topped bread. Perhaps it was because these were free cherries, maybe it was because I had to work for them but there was something a bit more special about this sweet treat than normal. read more

Sticky Toffee and Date Cake from Baked In

August 11, 2013 By All That I'm Eating 14 Comments

sticky toffee and date cake with toffee sauce and cream
Back in July I was at a food festival and got talking to a company called Baked In. They sell the dried ingredients you need to make a cake, all pre-weighed and ready to go. They asked me if I’d like to give one of their mixes a try, the sticky toffee and date was calling out to me so I grabbed a bag and headed off looking forward to putting on my apron. Since then we have had some very lovely hot weather and baking on a hot day wasn’t appealing to me; I’d much rather be outside in the sun. Last week however there was a rainy day last week which was the perfect time to get baking!

Ingredients

You will need (for one finished cake):

  • 1 sticky toffee and date cake mix
  • 1 egg
  • 125g unsalted butter
  • 175ml boiling water

Method

The instructions were really easy to follow and the kit contained everything including a butter measurer, a skewer to test doneness and baking paper. It smells lovely when you open the bag too thanks to the fresh vanilla in the sugar.

You start by greasing and lining a 20cm x 20cm tin and preheating the oven. The pre-weighed dates are mixed with boiling water to soften them. The sugar is mixed with butter before the flour is added. The egg and date mix is added after that. I’ve not made a cake with that method before but it worked a treat and was really easy to mix up. This goes into the oven for around 30 minutes. read more

Strawberry, Mint and Elderflower Mini Crumbles

July 18, 2013 By All That I'm Eating 18 Comments

strawberry and elderflower crumble
A crumble to me has a whiff of autumn about it. Apple crumble is a classic pudding but a while ago I tried a strawberry crumble and it was so good I couldn’t wait to give it a try myself. This is a pudding form of my previous cocktail post; a mixture of strawberries, mint and elderflower syrup but under a biscuity crust. The ingredients in this crumble scream of summer and the smell of cooking strawberries and buttery crumble is irresistible.

Ingredients

You will need (for two mini crumbles):

  • 200g strawberries
  • A few sprigs of mint
  • Elderflower syrup
  • 75g butter
  • 175g flour
  • 50g golden caster sugar and a little extra

Method

Start by chopping the strawberries up into halves, quarters, slices and all sizes so that you have a varied texture when the crumble is cooked. Put the strawberries into a little dish or ramekin, until it’s just over three quarters full, then sprinkle over a few chopped mint leaves. Drizzle over a little elderflower syrup; I used around a tablespoon for each ramekin.

In another bowl mix together the flour and butter with your hands until you have a mix that resembles breadcrumbs. Then stir in the sugar. Top each little strawberry filled dish with the crumble and then sprinkle over a little extra sugar on top.
Put the dishes onto a baking tray and then into a preheat oven at 180C for 30-40 minutes or until golden brown on top. read more

Coffee and Chocolate Shortbread

June 8, 2013 By All That I'm Eating 25 Comments

chocolate and coffee shortbread
I have been meaning to make some shortbread for a while but things just seem to get in the way and before I know it I’m tucked up in bed thinking, “Tomorrow. Tomorrow will be shortbread day”, it seemed to be a never ending cycle. However many things happen I always try to make time to bake a biscuit; there’s nothing else that can fill the void like making a homemade treat. To bring about my biscuit making I set about creating a coffee chocolate shortbread.

Kopi sent me some coffee and instead of making a mug of coffee and telling you about it I wanted to mix it up in something tasty! I like the idea of Kopi coffee; you sign up and get a different coffee sent to you each month. I was sent Sumatra Aceh Organic and it was deep and smooth with a little hint of bitterness but not too much. It formed a distinct crema layer on top with no effort on my part; I’ve been told a good crema is the sign of a good coffee.

Ingredients

You will need (for 12 fingers):
  • 180g plain flour
  • 1 tbsp cocoa powder
  • 50g caster sugar
  • 150g softened butter
  • 40g dark chocolate, finely chopped
  • 10g ground coffee

Method

Preheat your oven to 160C and grease a baking dish; I’ve used round, square and rectangular for this mixture before and all work well. read more

Caramelised Rhubarb Galette des Rois

May 10, 2013 By All That I'm Eating 25 Comments

rhubarb galette
Oh rhubarb. Not only the choice swear word for the less potty mouthed among us but also a rather delectable vegetable. I know it’s sort of a fruit but as it doesn’t have any seeds I will class it as a vegetable. I acquired my most recent handful of stalks after spending a lovely morning at a local farm shop (more about that in a separate post). I was even allowed to pull this straight out of the ground myself which was a rewarding, if somewhat exhausting, activity.

I have wanted to attempt this classic French ‘King of Tarts’ for so long; the rhubarb seemed like a perfect addition. I have made many frangipanes in the past so just halved what I would normally put in my large fluted tart tin for this recipe.

Ingredients

You will need (for one finished galette des rois):

  • 1 pack ready rolled puff pastry
  • 3 large sticks of rhubarb cut into inch sized pieces
  • 2 tbsp demerara sugar
  • 75g unsalted butter, very soft
  • 75g caster sugar
  • 75g ground almonds
  • 1 egg
  • 2 tsp milk and 1 egg beaten together (for glazing)

Method

Preheat the oven to 180C and put the rhubarb onto a baking tray in a single layer. Sprinkle over the demerara sugar and then toss the rhubarb in the sugar so it all gets nicely coated. Put this in the oven for 15 minutes to roast. When it’s done the rhubarb should have softened but retained its shape and be gently caramelised. Put the rhubarb to one side to cool. Leave the oven on after you remove the rhubarb as you’ll need it at 180C to bake the tart. read more

Veal, Pork, Serrano Ham and Porcini Cannelloni – Random Recipe Challenge

April 24, 2013 By All That I'm Eating 23 Comments

rick steins spanish cannelloni
I like to browse other people’s blogs and I particularly like the posts where there has been some sort of link or challenge and lots of bloggers take part. I like to think of them as online coffee mornings. I thought it was about time I got involved and had a go at one; enter Dom from Belleau Kitchen and his challenge called Random Recipes. I love the idea of opening a random cookery book and having to cook whatever is on the page that opens.

I know I’m guilty of flicking through all my recipe books and thinking how good the recipes sound but knowing full well it’s pretty unlikely I’ll ever give it a try because I’ll either forget or not have the time. This challenge suited me because I was forced not to turn the page to find something quicker, easier or less expensive. I stuck to the rules and ended up opening Rick Stein’s Spain to Canalons de ternera, cerdo, jamón y boletus or Veal, Pork, Serrano Ham and Porcini Cannelloni. read more

Spelt and Dark Chocolate Pancakes with Yoghurt and Honey

March 24, 2013 By All That I'm Eating 21 Comments

spelt chocolate pancakes
When the weather gets like this there is only one way to improve the situation; to fill your belly with buttery things. More specifically spelt and chocolate pancakes. It seems to have been raining forever recently! Each time I glance out of the window there is never even a peep of blue sky and hardly any bright daffodils to remind me it is in fact Spring. But no matter, I have honey at the ready.  Perhaps not the healthiest advice to give, a more svelte person might suggest a nice jog in the park but it wouldn’t quite cut the mustard for me. No, when my fingers are still blue in March I need chocolate and sticky sweet things. That’s where these Spelt and Dark Chocolate Pancakes fit in nicely. Rachel’s Organic sent me some Greek Yoghurt with Honey to try and I thought it would work nicely with these pancakes.

Ingredients

You will need (for around 16 pancakes):

  • 200g spelt flour
  • 2 tsp baking powder
  • 40g caster sugar
  • 20g melted butter, plus extra for cooking
  • 1 egg
  • 275ml milk
  • 40g dark chocolate chips
  • Yoghurt with honey to serve

Method

Start by sieving the flour, baking powder and sugar into a large bowl.

In a separate bowl mix together the melted butter, egg and milk until well combined. Stir the egg mixture into the flour mixture and add the chocolate chips. Give everything a good stir to make sure it is well incorporated.

Heat a little knob of butter in a frying pan until it just starts to foam and then drop the pancake mixture in using around 2 tbsp of the batter for each pancake.

Fry the pancakes until they are golden brown before flipping them over and cooking the other side. Don’t be tempted to flip too early as you could end up with miserable looking pancake. read more

Chocolate Shortbread with Rosemary and Hazelnuts

February 13, 2013 By All That I'm Eating 30 Comments

chocolate rosemary and hazlenut shortbread
A while ago I was having some lunch in a restaurant. For pudding I had some soft, sugar covered dough sticks which were to be dipped in a well known hazelnut chocolate spread. At some point in the kitchen a rogue bit of rosemary had ended up on my dough stick. I imagine there must have been some sort of herb-off going on in the kitchen between the chefs and the remnants of the duel had not been cleared up. Unbeknown to me I submerged it in hazelnutty chocolate and ate it. One of the best accidental mastications I’ve ever made and a combination I have recreated in this shortbread. You will need (for 12 pieces): 170g plain flour 1 tbsp cocoa powder 50g caster sugar 150g butter, softened 35g dark chocolate, chopped 15g hazelnuts 1/2 tsp dried rosemary

Start by chopping the hazelnuts and frying them in a dry pan until lightly toasted. Lightly grease a baking sheet. Chop the chocolate and hazelnuts finely to ensure even distribution in the finished biscuit. Put all the remaining ingredients in a bowl and beat together until they start to form a ball. It will look like a bowl of hopeless crumbs but keep going; it will make a lump eventually. Get your hands in the mix to bring all the mix into one ball. Lightly knead the dough.

Place the dough in the middle of the prepared baking sheet and then roll it out until it is about 20cm in diameter  Pinch, crimp or fork the edges of the dough to give it a nice edge. Prick the top with a fork and bake in a preheated oven at 160C for 40-45 minutes or until firm. Mark into wedges while still hot. read more
