Mint, Orange and Raspberry Ice Lollies

From time to time I get a real craving for something sweet after dinner. I could go and raid the biscuit tin; I have bourbons in there presently and they would go down a treat. But actually, I want something a little healthier and that’s where these mint, orange and raspberry ice lollies come in. They take moments to make and I can grab one from the freezer to cool down in this lovely summery weather we’re having and at the same time satisfy my sweet tooth. I have been growing some mint in the garden beautifully named ‘chocolate mint’ so I used some of that, you can use whatever mint you can get your hands on. read more

Saint Clements Breakfast Juice

Eating an orange as it comes is something I do not enjoy. Peeling it and eating it makes such a mess and there’s pith everywhere; slicing it into segments and chewing the orange flesh from the skin isn’t particularly pleasant either. However, slicing it and adding to desserts or using the juice is something that I think it worth the time. Nothing beats properly fresh orange juice. A nice glass of Saint Clements breakfast juice was on the cards with my latest delivery of oranges; a fantastically zingy way to start the day. read more

Blood Orange Posset

Slicing open a blood orange has an air of anticipation about it. Will it be intense purple almost throughout, have a few red stripes or actually be mostly orange? Whichever colour you end up with they all have the same fantastic flavour. I love cooking with blood oranges; adding a splash to a cocktail or baking them into something delicious. This recipe for blood orange posset was something I had never tried before and I couldn’t believe how easy it was to make. Just three ingredients are needed for a pudding that tastes so much more than the sum of its parts. read more

Mince Pie Fruit Loaf

I love a mince pie, but they have to be just right. I want the pastry to mince filling ratio to be almost 50:50; too much filling and you can forget it. Preferably my mince pies will be warm and covered in (clotted, ideally) cream. However, I can’t possibly eat that every single day and I still need my mince pie fix. This is how my Mince Pie Fruit Loaf came about; designed to have all the fruity spiciness from a mince pie but without the pastry and cream. Double Chocolate and Orange Cookies

After double, these cookies could only be improved by making them triple; perhaps a drizzle or dunk of white chocolate on each. As they stand however, my Double Chocolate and Orange Cookies are just splendid as they are. Especially straight from the oven. The smell as they bake is hard to beat. I like to use dark chocolate when making cookies as sweet as these because I think it adds some welcome bitterness. When it comes to rolling the cookies, for reasons I am not sure of, I always seem to manage to end up with thirteen; a perfect baker’s dozen. read more

Orange and Rosemary Martini

I’ll stick a herb in pretty much anything and adding or infusing herbs in drinks or cocktails is always delicious. My Orange and Rosemary Martini is particularly excellent for two reasons: first, it uses those fantastic big oranges that you can get at this time of year and second, that faint hint of rosemary is so distinctive it makes for a really refreshing martini. It looks inviting, it’s easy to make and the flavours take the edge of a plain martini (which I can find a bit harsh). This would work really well with leftover rosemary in the back of the fridge, or those sprigs you popped in the freezer. However you make it, and you should, make sure you’ve got a nice comfy chair and a book ready and waiting. read more

Crussh Book

The idea of smoothies and juices I really like; getting the nutrients (with or without the fibrous parts) in a convenient way really appeals. Not least because it gives me something to do with a fridge full of vegetables other than soup. The only thing that puts me off is the thought I needed another piece of kitchen equipment to be able to make my own. The publishers of Crussh, Nourish Books, got in touch to see if I’d like to try out the new book. I asked if a juicer was necessary and they said it wasn’t so I was looking forward to giving one of the recipes a try. read more

Blood Orange Tart with Caramelised Blood Oranges

I absolutely love blood oranges for several reasons: firstly they are just so pretty it’s hard not to like them, secondly as they are in season in January they are a welcome citrusy start to the year and thirdly I love squeezing a big bowl full to make my own pink juice. I wanted to make something to show off blood oranges at their best and I’ve fancied my hand at a tart au citron for a while. So I thought a sort of blood orange tart (or tart au blood orange) topped with caramelised blood oranges would be pretty tasty. read more

Cranberry and Clementine Crumble

I love cranberries and really try to make the most of them when they are around; they are almost fool proof when it comes to making jams and jellies as they are so full of pectin. This Cranberry and Clementine Crumble is a great way to use cranberries in a different way over the festive period and the addition of Cointreau adds a little something extra. I was asked to come up with a couple of wintry recipes as part of a project with Kenwood. I used one of the new Kenwood Chef Sense machines to test the recipe out at home and then I spent a day filming the recipes! I hope you enjoy it! read more
