Bergamot Lemon Drizzle Cake

Lemon drizzle has got to be up there with my most loved cakes. If there was a line up of carrot, lemon and chocolate caramel cake I’d be hard pushed to decide which to have, and, let’s be honest probably try to find a way to get a slice of each. You may have been following my bergamot adventures and it would have been silly not to bake a bergamot lemon drizzle cake as it combines two of my favourite things in one: tea (bergamot from Earl Grey) and, well, cake.

You will need:

  • 250g butter, softened
  • 250g caster sugar
  • 4 large eggs
  • 250g self raising flour
  • Zest from one bergamot lemon
  • Juice from two bergamot lemons
  • 3 tbsp caster sugar

Line a loaf tin with greaseproof paper and preheat the oven to 180C. I always use an independent thermometer in my oven, it’s such a liar. read more

Some people bake bread when it rains. I bake whatever contains as much butter and sugar as possible to cheer myself up. I’m not a big fan of rain. I made cookies once before when I was much younger and they didn’t exactly work out like they were supposed to; I made one very large, thin cookie. With the recent bout of cold and rain I felt it was time I attempted cookies again; why not. Wild Garlic Bread

If you fancy going out and trying your hand at foraging there isn’t much of a better time to start than now. Wild garlic is one of the best things to look for as it’s so distinctive; you smell it before you see it, the leaf is fairly specific and if you’re still not sure you can tear the leaves and do an additional sniff test before you start taking it home. I fancied my hand at baking some Wild Garlic Bread, sort of tear and share style, so off I sauntered to my favourite wild garlic spot to get picking. read more

My Perfectly Imperfect Chocolate Cake

I have a secret and I’m pretty sure I’m not the only one who keeps this quiet. I love baking, but, most of the time it never turns out quite how I envisaged it would. Getting all of a huff in the kitchen when the butter is still too cold, spilling the ingredients even when I’m being extra careful and being super paranoid checking the oven temperature is an awful lot of hard work for something that turns out too flat, not quite right or sinks in the middle. Cakes, I’m looking at you. Frankly, I’ve had enough of aiming for perfection and frowning at anything that dares to come out of the oven less than 100% correct, and if it tastes good who cares if it looks a bit skewiff? Garlic and Honey Mushrooms

I went to Madrid last year in search of tapas, paella and Rioja and I was not disappointed. I think I ate more often each day I was there than anywhere else I can remember. If memory serves the meals were thus: breakfast, snack at lunch, late lunch, tapas then dinner. Amazing. It took some adjusting on the return home to get used to a mere three meals a day I can tell you. One of the most remarkable meals I had while there was at a roadside restaurant; the sun was going down, it was wonderfully warm and I was complemented on my excellent Spanish. I mean, I can’t be 100% sure the waiter said it was good but I like to think he did. The starter was translated on the menu as garlic and honey mushrooms and I thought I’d have a go at recreating it. read more

Blood Orange Tart with Caramelised Blood Oranges

I absolutely love blood oranges for several reasons: firstly they are just so pretty it’s hard not to like them, secondly as they are in season in January they are a welcome citrusy start to the year and thirdly I love squeezing a big bowl full to make my own pink juice. I wanted to make something to show off blood oranges at their best and I’ve fancied my hand at a tart au citron for a while. So I thought a sort of blood orange tart (or tart au blood orange) topped with caramelised blood oranges would be pretty tasty. read more

Cranberry and Clementine Crumble

I love cranberries and really try to make the most of them when they are around; they are almost fool proof when it comes to making jams and jellies as they are so full of pectin. This Cranberry and Clementine Crumble is a great way to use cranberries in a different way over the festive period and the addition of Cointreau adds a little something extra. I was asked to come up with a couple of wintry recipes as part of a project with Kenwood. I used one of the new Kenwood Chef Sense machines to test the recipe out at home and then I spent a day filming the recipes! I hope you enjoy it! read more

This time of year is apple season; one of my favourite times of the year. I love going to the farmers’ market and picking out which apples to try for that week; I am lucky that they offer a try before you buy service as there’s always new varieties to sample. This recipe for Baked Apples with Salted Toffee Sauce is a modern interpretation of a vintage classic. It offers so much for something so simple. Review: What to Bake and How to Bake It. Buttermilk Pound Cake

What to Bake and How to Bake it book

I was sent What to Bake and How to Bake It to review and I was really looking forward to having a flick through the pages to see what to bake. I knew it would be a fab book from the quick look I initially had but I wasn’t quite expecting it to be such the joy that it was. The quirky cover makes it stand out amongst the other books on my shelves and I liked the colours and illustrations. There are two key things I noticed about the book which I love: firstly, Jane provides pictures right at the start showing you exactly what butter and sugar look like when perfectly creamed (and if they’re over beaten) amongst other techniques, secondly, she doesn’t assume you have a microwave. I don’t have a microwave and it’s amazing how many cookery books assume you have one (I think I’m in the minority but still!). The book is published by Phaidon and they kindly said I could publish one of the recipes so I tried my hand at the Buttermilk Pound Cake. read more

Fairtrade Coffee Shortbread

It’s #befair fortnight until 12th October which is all about asking the question, “Are we really as fair as we think?”. The Fairtrade Foundation is working to make us aware of small acts of fairness that can make a big change; like switching your morning coffee to a fair trade coffee. The people at the Fairtrade Foundation sent me a variety of coffees to try and I set about making a fair bake. This recipe for chocolate and coffee shortbread uses fair trade chocolate, sugar and coffee. read more
