Creamy Mushrooms and Wild Garlic on Brioche Toast

Foraging for food is something I have started to do over the last few years. Hunting down blackberry bushes in the autumn is something I’ve always done but I’ve never considered it to be ‘foraging’. To me, proper foraging involves a wicker basket, curiously shaped knives and an innate ability to avoid thorns and nettles. Since I started to appreciate the other things that can be found outdoors I have added other wild foods to my repertoire: rosehips, sloes, plums, strawberries, elderflower and now, at last, wild garlic. Somehow this most pungent of wild foods has eluded me until a few days ago when I finally found an abundance of it not a ten minute walk from my house. Creamy mushrooms and wild garlic sounded just perfect for lunch and even better on brioche toast.

Ingredients

You will need (for two):

  • 1 small onion, finely chopped
  • 250g mushrooms
  • 150ml single cream
  • 16 small leaves wild garlic, roughly chopped
  • Salt and pepper
  • Butter
  • Brioche, two slices

Method

Melt a knob of butter in a frying pan on a medium heat and fry the onion for at least 15 minutes or until starting to turn golden at the edges. Increase the heat, you may need to add some extra butter, then add the mushrooms.

Fry the mushrooms until they are golden and sticky before turning down the heat to low and stirring in the cream. Simmer the cream, stirring occasionally, until it’s reduced then add the wild garlic and some salt and pepper.

Turn the heat off and let the garlic infuse with the cream while you slice and toast the brioche. Serve the mushrooms atop the brioche. read more

Double Sausage, Cheese and Egg Muffin

What’s your guilty pleasure? I have to confess I very much enjoy a particular sausage, cheese and egg muffin from a well known fast food restaurant. I know, shameful. However I am admitting it now as part of trying to cleanse my system. I liked the idea behind the aforementioned muffin; a sausage and egg sandwich really. In order to still enjoy this behemoth breakfast (without the guilt) I needed to try and make my own version. Not only was I going to attempt to fill my guilty pleasure gap I was going to improve on the original.

Ingredients

You will need (for two):

  • 4 cumberland burgers
  • 2 eggs
  • 2 thick slices of mild cheddar cheese
  • 2 muffins

Method

I was lucky to be able to get these cumberland burgers from the farmers’ market and without them it wouldn’t have been the same. I reckon you could make cumberland burgers if you can’t get them by squeezing the sausage meat out of some nice sausages and making burger shapes.

Start by frying the burgers until brown on the outside and cooked through. Meanwhile get another pan on the heat to fry the egg in. I fried my egg inside an upside down pastry cutter so it was the same size as the muffin. Maybe a bit unnecessary but I didn’t want odd shaped egg white hanging out of my muffin; it would have ruined the effect! When the egg is almost ready and the yolk still gooey get the muffins toasting. read more

Banoffee and Chocolate Chelsea Buns

Have you ever had one of those days where a banana keeps looking at you? You keep seeing it out of the corner of your eye knowing it’s getting riper by the second but you just don’t feel like eating it. Everyone likes their bananas differently; some like them green and leaving that funny feeling in your mouth and others like them bruised and brown. I am on the green team; as soon as there’s a speck of brown on the banana skin I can’t stand it. But what do you do with that slightly brown banana that keeps winking at you? I hate to waste food and so I devised these Banoffee and Chocolate Chelsea buns, or as I like to call them: Chanoffee Buns. You will need: 500g strong white bread flour 50g caster sugar 1 x 7g sachet fast action yeast 200ml milk, warmed 50g unsalted butter, very soft and in cubes 1 egg 1 can dulce de leche (you won’t need the whole can) 1 ripe banana 50g dark chocolate chips

I have wanted to try making an enriched dough for a while so this was a perfect excuse. Mix together the flour, caster sugar and yeast in a bowl or mixer. Make a well in the centre and add the warm milk, egg and butter. Turn the mixer on or start to mix with your hands. Once mixed, knead the dough until it is nice and stretchy. Cover and leave in a warm place for 45-60 minutes or until doubled in size.

Remove the dough from the bowl and knock some of the air out. Divide the dough into two pieces and roll each piece out into a long rectangle. As you can see from the above picture an actual rectangle was hard for me to achieve but a bit of a jaunty angle here and there never harmed anyone. Spread a few spoons of the dulche de leche along the bottom two thirds of the long edge of the dough. Take half the banana and squeeze this onto the caramel towards the bottom edge of the dough. Top with half the chocolate chips.  read more

Chocolate Shortbread with Rosemary and Hazelnuts

A while ago I was having some lunch in a restaurant. For pudding I had some soft, sugar covered dough sticks which were to be dipped in a well known hazelnut chocolate spread. At some point in the kitchen a rogue bit of rosemary had ended up on my dough stick. I imagine there must have been some sort of herb-off going on in the kitchen between the chefs and the remnants of the duel had not been cleared up. Unbeknown to me I submerged it in hazelnutty chocolate and ate it. One of the best accidental mastications I’ve ever made and a combination I have recreated in this shortbread. You will need (for 12 pieces): 170g plain flour 1 tbsp cocoa powder 50g caster sugar 150g butter, softened 35g dark chocolate, chopped 15g hazelnuts 1/2 tsp dried rosemary

Start by chopping the hazelnuts and frying them in a dry pan until lightly toasted. Lightly grease a baking sheet. Chop the chocolate and hazelnuts finely to ensure even distribution in the finished biscuit. Put all the remaining ingredients in a bowl and beat together until they start to form a ball. It will look like a bowl of hopeless crumbs but keep going; it will make a lump eventually. Get your hands in the mix to bring all the mix into one ball. Lightly knead the dough.

Place the dough in the middle of the prepared baking sheet and then roll it out until it is about 20cm in diameter  Pinch, crimp or fork the edges of the dough to give it a nice edge. Prick the top with a fork and bake in a preheated oven at 160C for 40-45 minutes or until firm. Mark into wedges while still hot. read more

Ploughman’s; is there a better luncheon?

On a cold winter’s day after having the wind whip around your face for a few hours it is essential to come back to a fantastic lunch. Perhaps a bowl of warm soup and crusty bread, maybe a lovely pasty or pie. For me, there is no better lunch than a ploughman’s. I’m not sure why it’s called as such but I’m guessing it’s something to do with ploughing. Which, incidentally I have tried my hand at before and it’s safe to say I won’t be quitting my day job. read more

This recipe is not for those who strive for a smaller waist. Mushroom Soup with Grilled Wild Mushrooms and Blue Cheese Croutons
There’s plenty of inspiration around at the moment for your Brussels sprouts, turkey, leftovers and the like. The thing I find my fridge full of, at this time of year particularly is cheese. Don’t get me wrong I will happily eat it all on its own or with copious pickled onions but when you’re preparing for a week of non-stop eating it’s nice to have something light and fresh to get things going. This recipe also helps to make a small dent in the side of any cheese mountain you may be harbouring.

You will need (for 2 bowls):
1 onion, roughly chopped
Butter
300g mushrooms, any will do but I used Portobello
A few sprigs of thyme, leaves removed
400ml vegetable stock
150ml milk
Salt and pepper
Small handful wild mushrooms
1 small baguette
Blue cheese

Start by frying the onion in a small knob of butter until softened. If using Portobello mushrooms I always peel them; mostly because I immensely enjoy doing it. Chop the mushrooms and add them to the onion and cook for a few minutes until they release some of their water. Add the thyme leaves, vegetable stock and milk, cover and cook for about 10 minutes or until the mushrooms are soft. Blend the soup, season and then return to the heat to keep warm while you make the croutons. read more

Cranberry, Cointreau and Clementine Sauce

Christmas cannot be a cranberry free zone; this versatile berry can be paired with both sweet and savoury things. Not only is this fruit a great all rounder but it makes itself into a sauce in no time. As the cranberry transforms so simply into a sauce it lends itself to interference, by you, to turn it into something new and exciting. This recipe is for my cranberry sauce with Cointreau and clementine which is extremely delicious when used as a mini pie filling, or, as I like to call them: festive puffs.

You will need (for the cranberry sauce):
200g cranberries
80g sugar
50ml water and 50ml clementine juice, mixed together
Splash Cointreau

Put all the ingredients into a pan and cook for five minutes until the cranberries start to burst. If it looks a like there’s a little too much moisture (I find cranberries to vary a lot in their water content) then cook for a few minutes more to evaporate some of the water. Put the cranberry sauce into a bowl and leave to cool. I’m not sure it gets much simpler and this sets to a lovely dolloping consistency. read more

An Autumn Picnic 3 of 3: Caramelised Pears with Crumbled Parkin

A picnic must always have something sweet to round it off; a jam tart or two, some chocolate biscuits or even a slice of cake. This being an autumn picnic meant that the sweet must have a seasonal feel. Pears were an obvious choice but you can’t finish a picnic with just a pear that would be akin to having a carrot instead of a birthday cake. No, these pears needed some warmth and caramelised pears seemed just the ticket. 

Parkin is a traditional cake eaten on Bonfire Night so I made some a few days before the picnic as I had heard it is a cake better left before eating. This would be the perfect accompaniment to the warm gooey pears. read more

An Autumn Picnic 2 of 3: Garlic Butter Mushroom Burgers

By now those picnic attendees that are left will be crying out for some sustenance and these garlic mushroom burgers really hit the spot; they are warm, juicy and full of flavour. There are several reasons why I chose to use mushrooms rather than meat: you don’t need to take an extra pan, minimum effort is required for delicious results and I think they are actually nicer! Also they sit happily on the BBQ needing barely any attention so you can get on and enjoy the picnic without having to stand and watch over them.


You will need:

4 large mushrooms Garlic butter (butter, garlic, parsley and black pepper) 4 bread rolls

I prepared the butter before I left by crushing three garlic cloves into about 50g butter and mixing it together with a few sprigs of chopped parsley and some black pepper.
Take the mushrooms and wrap them (gill side up) in some foil so they are completely covered. Put the parcel onto the edge of the BBQ, so it is not directly over the heat, and leave them to soften in their own juices for about 20 minutes. When they are soft put a little of the garlic butter onto the mushroom gills and leave the parcel open so that some of the moisture evaporates. After about five minutes toast the buns on the BBQ and put a mushroom in each bun. read more
