Beer Mustard and Onion Macaroni Cheese - All That I'm Eating

It’s always interesting to try something different with a classic. Not content with, although always very welcome, standard macaroni cheese I wanted to add a few bits here and there to make it extra special. I dreamt up my beer, mustard and onion macaroni cheese and set about making it. I wasn’t sure how best to incorporate the beer so I settled on trying out a beer béchamel.

Ingredients

You will need (for 2):

  • 150g macaroni
  • 25g butter
  • 25g plain flour
  • 100ml milk
  • 200ml beer – preferably a bitter (if you’re not sure what’s what, this guide can help!)
  • 50g strong cheddar, grated
  • 100g emmental, grated
  • 1 tbsp wholegrain mustard
  • 2-3 tsp caramelised onions
  • Salt and pepper

Method

Cook the macaroni according to packet instructions. Preheat and oven to 180C.

To make the beer béchamel melt the butter over a medium heat then add the flour. Cook the flour for at least one minute. Mix together the milk and beer then slowly add this to the butter and flour, stirring all the time so you don’t get any lumps. Cook the béchamel for a few minutes until thickened then remove from the heat. read more

Bergamot Gin and Tonic

I am very familiar with the flavour of bergamot, being an avid Earl Grey fan, but I had never seen or tasted the bergamot lemon itself. A mystical fruit that I thought was confined to tea makers and lucky Mediterranean gardens. Then I found I could order some beautiful organic ones along with my veg box; it would be rude not to. My first thought when I got them was to add a slice to some hot water, just to smell and taste them. But then I remembered I had some gin, and, you know, why not? Mini Cheesecake Mess with The Laughing Cow

I love cheesecake. This recipe for mini cheesecake mess is a great way of using up almost anything sweet you’ve got hanging around and, if I do say so myself, look pretty cute too.  A lovely little sweet treat for lunch or after dinner. Have you ever tried to make cheesecake (or cream cheese icing) with low fat soft cheese? It never seems to work for me and just ends up all runny and no good at all. I thought I’d give it a try with some Laughing Cow Extra Light to see if that would work, and use up some leftover festive food in the cupboards, and I was so pleased with how they turned out! read more

Ultimate Hot Chocolate Gifts

I love a good hot chocolate; not too sweet, not too bitter but full of chocolate flavour and I have been working on perfecting my recipe for the ultimate hot chocolate. This recipe is too good not to share, and what nicer way to share it than making some (ever so pretty) make-your-own hot chocolate gifts. You need only four ingredients, a few empty jars, some string, paper and your very neatest handwriting. A word of warning: make sure you make enough to keep one for yourself.

Below are the amounts to make enough mixture for one person so double, triple, quadruple and all sorts depending on who you are making for. read more

Slojito

Slojito

I have been so busy this year that I have run out of time to make my own sloe gin. It’s not the end of the world though as I have some of last year’s stash left and once that’s gone there are some delicious ready steeped and drained sloe gins around. As much as I enjoy a classic sloe gin and tonic there’s much enjoyment to be had mixing up something different.

Crussh Book

The idea of smoothies and juices I really like; getting the nutrients (with or without the fibrous parts) in a convenient way really appeals. Not least because it gives me something to do with a fridge full of vegetables other than soup. The only thing that puts me off is the thought I needed another piece of kitchen equipment to be able to make my own. The publishers of Crussh, Nourish Books, got in touch to see if I’d like to try out the new book. I asked if a juicer was necessary and they said it wasn’t so I was looking forward to giving one of the recipes a try. read more

A week in Wales

I have just come back from a week in Wales. We went to a place where there is no phone signal and not even a hope of connecting to the internet so you have no choice but to properly relax and get away. Holidaying with the family is always good fun; lots of meals in, walks and catching up on silly things. This is what I got up to over the week and, if you’re heading off to mighty Wales, I hope it gives you some ideas for what to do.

We started up in Snowdonia National Park staying in possibly the strangest hotel I’ve ever been to. It was one of those hotels that time forgot; apparently the cleaner forgot some of it too but when has dust ever hurt anyone? The room was nice but it was like a gadget bomb had exploded in there and each individual piece of technology had adhered itself to a socket or wall. No idea what any of it was for. The shower deserves a special mention for being (literally) out of this world weird. There were lights on the outside, inside and all over the place; nozzles, knobs and buttons everywhere and doors that wouldn’t have looked out of place on a spaceship air locker. On the plus there was a radio in there but it would only tune to white noise. Never mind. Despite its many, many options for water temperature, angle and point of exit it was a surprising disappointment; not much more aggressive than a thick fog. read more

I love this time of year in Britain; when the weather is getting warmer and warmer but it hasn’t quite got to the muggy stage and it’s still nice and cool at night. There are flowers in the hedges and the fruit has started growing on the trees; most of my time is spent outside and as far as I’m concerned, shoes are optional. I have done plenty of cooking with elderflower in the past and it seemed an ideal time to try out something slightly different and obscenely summery: Elderflower, Cucumber and Mint Gin. read more

Earl Grey Gin Cocktail

I like tea and I like gin. I particularly like earl grey and gin based cocktails so I thought it was about time that I got creative with my cocktail shaker and tried these two tastes together. Not for my own benefit of course, all in the name of experimenting. Whenever I make a cocktail I am always amazed at how the slight slip of a hand can affect the end taste of the drink; too sweet, too acidic, too much alcohol. Then again, you can add a bit more of this and a bit less of that depending on your tastes. read more

Frozen Blackcurrant Cordial

Freezer roulette, UFO night (unidentified frozen object) or whatever you call it when you select and defrost a frozen item of interest for your dinner can result in complete success or failure. I know there are those of you with very regimented and organised freezers who don’t have this issue but I know plenty of people who have chosen what they think is a delicious beef stew for their supper only to find out it used to be a chocolate gateaux. This recipe is for you; those freezer lovers who froze the summer’s berries in order to make the most of them at a later date. My frozen blackcurrant cordial recipe could easily be made of whatever berries you have; although probably best check that they are in fact berries and not spaghetti bolognese. read more
