Double Chocolate and Orange Cookies

After double, these cookies could only be improved by making them triple; perhaps a drizzle or dunk of white chocolate on each. As they stand however, my Double Chocolate and Orange Cookies are just splendid as they are. Especially straight from the oven. The smell as they bake is hard to beat. I like to use dark chocolate when making cookies as sweet as these because I think it adds some welcome bitterness. When it comes to rolling the cookies, for reasons I am not sure of, I always seem to manage to end up with thirteen; a perfect baker’s dozen. read more

Kanelbullar (Swedish Cinnamon Buns)

Kanelbullar, Swedish Cinnamon Buns

While in Gothenburg last year I think I had a Kanelbullar every day. When it’s cold and windy outside sinking your teeth into one of these alongside a hot cup of coffee is just perfect. Slightly sticky, full of cinnamon and normally covered with nibbed sugar you can smell them before you see them in the cafés of Sweden. After trying a few different recipes I have come up with my own Kanelbullar recipe; the ideal balance of bread, wholesomeness and sweetness.

Ingredients

You will need (for 12 Kanelbullar):

  • 40g butter
  • 225ml milk
  • 7g sachet fast action yeast
  • 30g caster sugar
  • Pinch salt
  • 250g wholemeal flour
  • 250g strong white bread flour

Chocolate Fudge Cheesecake Brownies

I like to think I’m fairly well behaved. The majority of what I eat I make myself and is somewhat healthy and well balanced. I find a place for the indulgent dishes (macaroni cheese, dauphinoise and the like) amongst the day to day soups, salads, vegetables and wholegrains. I’m by no means a saint and I think a little indulgence never hurt anyone. When I plan to make something that’s maybe a little bit ‘naughty’ I make sure I go all out. Bergamot Lemon Drizzle Cake

Bergamot Lemon Drizzle Cake

Lemon drizzle has got to be up there with my most loved cakes. If there was a line up of carrot, lemon and chocolate caramel cake I’d be hard pushed to decide which to have, and, let’s be honest probably try to find a way to get a slice of each. You may have been following my bergamot adventures and it would have been silly not to bake a bergamot lemon drizzle cake as it combines two of my favourite things in one: tea (bergamot from Earl Grey) and, well, cake.

You will need:

  • 250g butter, softened
  • 250g caster sugar
  • 4 large eggs
  • 250g self raising flour
  • Zest from one bergamot lemon
  • Juice from two bergamot lemons
  • 3 tbsp caster sugar

Line a loaf tin with greaseproof paper and preheat the oven to 180C. I always use an independent thermometer in my oven, it’s such a liar. read more

Spinach and Cheese Vegetarian Sausage Rolls with The Laughing Cow

Hang on, a sausage roll that doesn’t have any sausage in it? Correct. I absolutely love a proper sausage roll; when the juices run out of it and caramelise under the flaky pastry. To pack a picnic with a couple of sausage rolls and a flask of tea is to pack a fine picnic as far as I’m concerned. So what’s with this vegetarian creation? My reasons are threefold: firstly, at this time of year I need pastry; secondly, I love spinach and particularly spanakopita and thirdly I wondered what a vegetable ‘sausage’ roll would be like. read more

Blackberry and Pear Pavlova

This is only my second pavlova. To me, meringue has always been steeped in mystery and wonder and I found it slightly intimidating. Crispy on the outside, gooey in the middle; is this all really achievable with just two ingredients? Well yes, turns out it is. Some people bake bread when it rains. I bake whatever contains as much butter and sugar as possible to cheer myself up. I’m not a big fan of rain. I made cookies once before when I was much younger and they didn’t exactly work out like they were supposed to; I made one very large, thin cookie. My Perfectly Imperfect Chocolate Cake

I have a secret and I’m pretty sure I’m not the only one who keeps this quiet. I love baking, but, most of the time it never turns out quite how I envisaged it would. Getting all of a huff in the kitchen when the butter is still too cold, spilling the ingredients even when I’m being extra careful and being super paranoid checking the oven temperature is an awful lot of hard work for something that turns out too flat, not quite right or sinks in the middle. Cakes, I’m looking at you. Frankly, I’ve had enough of aiming for perfection and frowning at anything that dares to come out of the oven less than 100% correct, and if it tastes good who cares if it looks a bit skewiff? Beetroot and Poppy Seed Cupcakes

Beetroot and Poppyseed Cupcakes - All That I'm Eating (1 of 3)

I am a fan of beetroot; I’ve tried many different recipes with them in the past but sometimes when the vegetable box keeps bringing me beetroot I am stuck for what to do. I have made chocolate and beetroot cake in the past and I fancied trying something sweet with my latest accumulation, hence, Beetroot and Poppy Seed Cupcakes. Something a little different and somewhat stripy for the lunchbox.

You will need (for 12 cupcakes):

  • 200g self raising flour
  • 1 tbsp baking powder
  • 150g caster sugar
  • 2 eggs
  • 150ml sunflower oil
  • 200g raw beetroot, peeled and grated
  • 2 tbsp poppy seeds
  • 25g softened butter
  • 200g full fat cream cheese
  • 300g icing sugar
  • 1 tbsp poppy seeds

Preheat the oven to 180C. Squeeze as much water out of the grated beetroot as you can (your hands will turn a fabulous pink colour). read more

Blood Orange Tart with Caramelised Blood Oranges

I absolutely love blood oranges for several reasons: firstly they are just so pretty it’s hard not to like them, secondly as they are in season in January they are a welcome citrusy start to the year and thirdly I love squeezing a big bowl full to make my own pink juice. I wanted to make something to show off blood oranges at their best and I’ve fancied my hand at a tart au citron for a while. So I thought a sort of blood orange tart (or tart au blood orange) topped with caramelised blood oranges would be pretty tasty. read more
