Blackcurrant Pancakes

Apparently you should breakfast like a King. Despite not having continuous supply of quail’s eggs, truffle bread and gold leaf (I imagine that’s what they have to start the day) my weekday breakfasts are never very exciting. It doesn’t help that I don’t give myself enough time in the mornings to make anything exceptional but at the weekends I try to make a little more effort.

Sunday arrived and brought with it a craving for pancakes. I had bought some blackcurrants at the market; as one of my favourite berries they are irresistible to me. I’m not sure what it is about them, perhaps their distinct flavour, that makes me love them so much. It would have been rude not to include some for breakfast. 

You will need (for about 16 pancakes):
200g self raising flour
1 1/2 tsp baking powder
40g sugar
1 egg (beaten)
20g melted butter
275ml milk
150g blackcurrants (topped and tailed) read more

English Heritage Cherry Tart

Once, a very long time ago, I ate a whole bowl of cherries. Not particularly interesting until you find out that not only did I eat the cherries but I ate every single one of the stones too. When you are five years old and take everything your father says as gospel you can imagine the panic, and intrigue, when you’re told that a cherry tree will start to grow in your stomach. It is now some years later and I’m still waiting. Recently I was very lucky to get my hands on some English heritage cherries so I set about baking a heritage cherry tart.

My cherry eating strategy has changed now. They are one of my favourite fruits but these days the stones end up in my garden; again, still waiting. My fascination with cherries hasn’t diminished either; a flavour like no other, thin skins and awkward to cook with, when they are in season I can’t get enough of them. 

Ingredients

You will need (for one tart):

  • 450g cherries
  • Sweet shortcrust pastry (100g cold butter, 200g plain flour, 30g caster sugar, 1 egg beaten)
  • Cream filling (150ml double cream, 2 egg yolks, 50g sugar)
  • 1 egg, beaten 

First of all make the pastry. Rub the butter into the flour until you have a breadcrumb texture. Add the sugar, lightly mix it in and then bring the pastry together with the egg. If you find the pastry is a little dry you can add drops of cold water until it comes together. Chill the pastry in the fridge for half an hour. Broccoli Cheese – Tenderstem in 10 challenge

With all the miserable weather it seemed positively autumnal but it’s not the time for stews, long bakes and comfort food. You may have seen my broccoli pesto post last week; it was a good dinner, marvellous in fact, but I was left with another pack of broccoli. Another meal in under 10 minutes using less than 10 ingredients needed to be devised for the Tenderstem challenge.

I wanted to make something recognisable and filling, healthy and indulgent and of course quick and simple. After much head scratching I was almost at the point of deciding that I was ridiculous and almost opted for a broccoli sandwich when I changed my mind. Thank goodness I did; imagine how soggy a broccoli sandwich would be, no amount of condiments could cheer that up.  

And so to dinner. Broccoli cheese doesn’t have quite the same ring to it as cauliflower cheese but it has all the flavour.

Bluebird at Chelsea

This was a gifted meal. A few weeks ago there was an elusive warm day. I ventured to London to meet a friend for lunch and was getting rather overheated. I’d planned my attire for a cold, wet day you see. In order to rectify my perspiring situation I decided to be cultural and went to have a gander around the Saatchi Gallery. It was wonderfully chilled in there; in both temperature and atmosphere. Worth a meander if you’re in the area. After a rather confusing start to the lunch where I didn’t know if I was meant to be in the garden area or the restaurant I finally found my bearings and sat down for a relaxing lunch at Bluebird Chelsea.

 

The meal started with an amuse bouche of gazpacho. This is the second gazpacho I’ve ever had in a restaurant and was decidedly more flavourful than its predecessor. When it was brought to the table it had crab in; I cannot eat shellfish but it was whisked away and a replacement brought in no time. It had an intense tomato flavour, was chilled without being too cold and I really liked the chives instead of the parsley you’d normally have. Rhubarb and Hazelnut Shortbread Crumble

There are times in life where a great slice of cake is just what you need. A bad day at work, it’s been raining and you’ve left the washing out or unexpected expenditure all seems insignificant, smaller somehow, when you’re eating sponge and jam. These problems can even disappear completely if it’s a cake fresh from the oven. There are those other times though. When cake just can’t cut the mustard and it’s the bite of a biscuit that you need.

I had this need, this craving for a properly good biscuit. Nothing disastrous, or even slightly unusual, had occurred but sometimes you don’t need an excuse. I had a fridge load of rhubarb that needed a good home. Rhubarb is always very happy under a crumble topping but a crumble wasn’t going to help my desire for a biscuit. I devised a cunning ensemble where biscuit and crumble would meet. 

You will need:
400g plain flour
100g sugar and a little extra
300g butter, at room temperature
2 tbsp chopped, toasted hazelnuts

Broccoli, Walnut and Blue Cheese Pesto – Tenderstem in 10 challenge

Broccoli is a brilliant vegetable but occasionally I find myself at a loss for what to do with it. It’s great with spices, superb with salty soy and oyster sauce and phenomenal with blankets of cheese. So when the kind people from Tenderstem asked if I was interested in taking part in their challenge I gladly accepted; a chance to really think outside the box.
The challenge was to make a meal using the Tenderstem broccoli using less than 10 ingredients in less than 10 minutes. I felt like a Ready Steady Cook contestant. I received a lovely parcel which contained the broccoli as well as a kitchen timer to keep me on track! read more

Wet Garlic Pizza Bread and Tiger Tomato Salad

It’s a good job I’ve no aspirations to become a vampire. Garlic seems to divide opinion; you either can’t get enough of it or can’t stand it. I love it. There are of course many meals where it serves the purpose of adding to the background flavour rather than dominating the meal but a life without garlic, for me, would be a very miserable one indeed.

A few juicy stems of wet garlic arrived in my vegetable box. I knew they would be pretty powerful and pungent and it seemed only right to make garlic bread. However, garlic bread alone does not a meal make and fortunately I had some brilliant tiger tomatoes that I picked up from the farmers’ market. I’m not sure how clearly you can see the tomatoes but they are glorious; vibrant red flesh, green seeds and dark green striped skin.

You will need, a light lunch for two:

  • For the dough: 500g strong white flour, 1 tsp sugar, 1 tsp salt, 7g sachet yeast, 300ml warm water
  • 3 wet garlic bulbs
  • Small handful fresh parsley
  • Tomatoes, spme very ripe and tasty ones
  • 6-8 tbsp olive oil
  • 1 1/2 tbsp white wine vinegar
  • A few fresh basil leaves
  • Salt and pepper

Start by making the dough. I confess that since the acquisition of my food mixer, making bread dough is simple and carefree. Put all of the ingredients into the bowl, turn the dough hook on and come back 10 minutes later to perfectly kneaded dough. Lazy? Perhaps. Easy? Definitely. Leave the dough in the bowl, cover the top and leave until doubled in size; an hour or so. read more

Vegetable Patch Update

Oh how the garden doth not grow. If you partake in any form of gardening and live in the UK you’ll know how I feel. I took these pictures about a week ago so they’re slightly old now but it’s not much improved from then due to the persistent, relentless, miserable rain. Normally rain doesn’t bother me because it means my vegetables are happy but June and July have been the worst I’ve ever gardened in. Still, it’s not all bad…

  My apple tree had a pretty feeble blossom this year and I wasn’t sure it was going to fruit but there are quite a few of these little apples adorning the tree so I’m hopeful for a few apple pies. My herbs are doing well but the sage is trying to take over the whole herb patch so I think I’ll need to be a little more ferocious with the cutters than I have been. The rosemary seems to have grown almost a foot so it must be a thirsty plant. I’m not sure you can see it too well but I think that little dark fluffy thing is a potential quince. Let’s hope so anyway, even if I had just one I’d be very, very happy. My golden gages are doing exceptionally well, I planted the tree last Autumn. I thought the frosts and early blossom would have left me gagging for gages but I have a pretty healthy amount considering the size of the tree. I didn’t realise they were russeted but I think that makes them even more charming. With the lack of warm weather I’m not sure when they’ll be ripe for picking. My rhubarb seems to be happily sucking up all the rain and has grown massively considering it’s in the shadier part of the garden. It’s overshadowing my other rhubarb plant though so come Autumn I’ll have to move it. My broad beans are happily growing although there are a few with unwanted blackfly. I love growing broad beans just for the flowers let alone the magnificent and plentiful pods that come afterwards. My tomatoes seem pretty miserable. Normally very thirsty when the weather’s hot they seem depressed at the lack of sunlight. Here’s hoping they’ll perk up and deliver some delicious fruit. My courgette patch is the largest it has ever been with 12 plants gone in and growing well. They do seem almost as upset as the tomatoes so I’m not hopeful of getting any fruit. It’s a shame because these were all heritage varieties; baby blue, flying saucer shapes and knobbly yellow ones. Fingers crossed. I ate the above peas straight off the plant and out of the pod. People say that the peas you grow yourself will be the sweetest. I’ve always thought it’s probably true but would you really notice? It turns out that yes, it is so noticeable it almost smacks you in the face. Not only are they like little drops of nectar but they are so fresh it’s hard to explain. Until you’ve had a pea as fresh as that, you haven’t had a pea. My peas are what I’m most proud of; the reason being that this is the first time I have ever grown them and they are doing magnificently. Well, as far as I’m concerned one pod is a triumph but I’m inundated with them and am waiting for the peas to form.

Raspberries, Elderflower Cream and Leftover Elderflower Shortbread - finished

So you’re in the kitchen feeling a bit peckish and you spot the biscuit tin. My biscuit tin had previously been looking after some elderflower and white chocolate shortbread but was there any left? Yes. Yes there was some left, but just one piece. Should I eat it myself and snub all knowledge of its existence? 

 

Unfortunately as I was plotting how to cover my tracks my other half walked in to the kitchen with a similarly devilish plan. I think for a moment we both considered lunging for the tin and throwing all sense of caution out of the window. I’m glad this didn’t happen as one or more of us would probably have ended up with crumbs in our eyes and shards of shortbread embedded in our forearms. read more

Petersfield Food Festival 2012 and my second Cookery Demo

 Petersfield is not too far from me and I went to their food festival last year. It boasted a marvellous selection and variety of stalls. I happily ate my way around last year and was looking forward to going again this year. The only difference was that this year I was to be part of the festival and do a cookery demonstration.

The sky looked as though it wasn’t going to be on our side but the sun was shining away by the afternoon. Before and after the demo I had a good look around at the stands and producers, there were some great stalls and I sampled an awful lot of lovely food. Below is a small selection of producers who I was able to have a nice long chat to. 

It’s not food but I thought these little wooden ducks were very sweet. There were quite a few craft stalls dotted within the food stands which made it more varied. Last year there were lots of cake and cupcake stands but this year there were more cheese stands than any other. A few even sold out of cheese before the festival was over.

The first stall I found was The Bloomberry Juice Co who make brilliant juice drinks, each one with a berry and a bloom inside. My favourite was Apple, Blueberry and Lavender. They also do an Orange, Honey and Elderflower which is just my cup of tea! I liked these because they weren’t too sweet and had honest, natural flavours.  read more
