Bergamot Lemon Drizzle Cake

Lemon drizzle has got to be up there with my most loved cakes. If there was a line up of carrot, lemon and chocolate caramel cake I’d be hard pushed to decide which to have, and, let’s be honest probably try to find a way to get a slice of each. You may have been following my bergamot adventures and it would have been silly not to bake a bergamot lemon drizzle cake as it combines two of my favourite things in one: tea (bergamot from Earl Grey) and, well, cake.

You will need:

  • 250g butter, softened
  • 250g caster sugar
  • 4 large eggs
  • 250g self raising flour
  • Zest from one bergamot lemon
  • Juice from two bergamot lemons
  • 3 tbsp caster sugar

Line a loaf tin with greaseproof paper and preheat the oven to 180C. I always use an independent thermometer in my oven, it’s such a liar. read more

Beetroot, Lentil and Bergamot Lemon Salad

I’ll be honest, salads don’t tend to excite me very much. Don’t get me wrong, I appreciate the freshness a few leaves bring on the side of something else but as a standalone dish, it’s not really for me. However, things have changed and I’ve started to make, what I would call, more ‘bulky’ salads. This particular combination of beetroot, lentil and bergamot lemon is so colourful and combined with a bit of goat’s cheese is equally good warm or cold.

Bergamot Gin and Tonic

I am very familiar with the flavour of bergamot, being an avid Earl Grey fan, but I had never seen or tasted the bergamot lemon itself. A mystical fruit that I thought was confined to tea makers and lucky Mediterranean gardens. Then I found I could order some beautiful organic ones along with my veg box; it would be rude not to. My first thought when I got them was to add a slice to some hot water, just to smell and taste them. But then I remembered I had some gin, and, you know, why not? There are different shades of green in spring; the deep greens of kale and purple sprouting broccoli and the vibrant greens of asparagus and wild garlic. It is around this time each year that things seem to come alive, the evenings are getting longer and the days warmer. Trees are blossoming and everyone seems to awaken from a winter slumber to shake off those cobwebs (literally and figuratively). I start to cook lighter meals at this time of year but there’s always room for something more indulgent for those chilly evenings that catch you by surprise. Upside Down Lime Cake

Citrus in January is obligatory as far as I’m concerned. Whether its limes, lemons, grapefruits, blood oranges or, if you’re lucky, bergamot lemons there’s always got to be something citrussy in the kitchen. That sharp hit of acidic, fresh taste is just what I need on these cold, grey days and if that lifting flavour can be added to a cake then it’s all the better. New in the Kitchen November

Lee Kum Kee Sauces

November has certainly let us know it’s arrived! The weather has definitely got colder and the trees are all almost bear. That means that the cooking has changed in my kitchen. It’s all about comfort food, being clever with leftovers and slow cooking at the weekends. I have been trying out some new products this month too so here’s what’s new in the kitchen November.

Lee Kum Kee sent me a few of their sauces to try. The Kung Pao chicken (in the pouch) was really good for a chicken stir fry with bean sprouts and cashew nuts. You use a little of the sauce to marinate the chicken before you cook it so it’s good for a quick weeknight dinner. I really like the packaging on the bottles of oyster sauce and sesame dressing, they’ve cheered my cupboard up! The sesame dressing is particularly good over steamed carrots. read more

The Maytime Inn at Asthall

This was a gifted meal.

A few Fridays ago I headed off for a one night stay at The Maytime Inn at Asthall (near Burford, Oxfordshire). Sometimes I think a weekend away is better than a week away. Taking a Friday afternoon off to escape somewhere, far enough away that you’re somewhere different but not so far away that you’re forever travelling, to spend a short time relaxing or doing something new is always good idea as far as I’m concerned. Asthall is a very picturesque Cotswold village at the heart of which is The Maytime Inn. read more

Earl Grey Gin Cocktail

I like tea and I like gin. I particularly like earl grey and gin based cocktails so I thought it was about time that I got creative with my cocktail shaker and tried these two tastes together. Not for my own benefit of course, all in the name of experimenting. Whenever I make a cocktail I am always amazed at how the slight slip of a hand can affect the end taste of the drink; too sweet, too acidic, too much alcohol. Then again, you can add a bit more of this and a bit less of that depending on your tastes. read more
