Swedish Style Burgers

Swedish Style Burgers
You would have thought that a burger lends itself well to good photo-ability. For some reason when it comes to taking a picture of a burger it never looks quite how I imagine it will. No matter what I try the burgers always shrink leaving even the smallest buns looking far too big. There is either too much or not enough salad so although I make them sort of regularly I rarely blog about them or take a picture. However, when the below recipe came through for Swedish burgers with Västerbottensost cheese I couldn’t resist. 

Recipe from Västerbottensost cheese as part of their ‘Swedish summer to remember’.

Ingredients

You will need (for two):

  • 350g minced venison (or beef)
  • 1 rasher fried bacon, chopped
  • 1 tsp crushed juniper berries
  • Salt and pepper
  • Västerbottensost cheese, grated
  • Buns of your choice and salad and condiments to serve

Method

Put the venison mince into a bowl and add the chopped bacon, juniper berries and salt and pepper.

Give everything a really good mix then form into four burger shapes (I made quite small ones).

Heat a pan to high and add a little oil to the pan. Fry the burgers until lovely and brown on the outside and cooked through. For the last few minutes of cooking add the grated Västerbottensost and allow to melt. read more

Celeriac Remoulade, Venison and Sourdough Open Sandwich

I don’t wish to be cruel but a celeriac is never going to win the most attractive vegetable of the year award. To make up for its less than enticing characteristics you would have thought Mother Nature would make it easy to get inside, peel it like an orange for example, but the skin of a celeriac is as tough as old boots. That’s not to say it’s not worth the effort, the hand cramp and the awkwardness; it’s a great root to take some frustration out on.

Celeriac has a wonderful flavour, sweetness and crunch and it is at its best (in my opinion) when raw. Uncooked root vegetables must be dressed, it would be rude otherwise, and a classic celeriac remoulade is something I’ve always wanted to try. For me the remoulade needs to have creaminess, some acidity, freshness and a little mustard heat. Combine that with some lovely venison, peppery rocket and tangy sourdough and you’ve got yourself a match made in heaven. read more

Game and Root Vegetable Stew

Game is a difficult food. It’s hard to convince people to try it when they are absolutely determined they hate it, if you’ve never handled it before it can be intimidating to try and skin a rabbit and despite your best efforts sometimes you wonder why you bothered buying venison when you might as well have bought beef. Regardless of all or any of these, game is tremendously delicious.

I don’t tend to have ‘healthy’ recipes on here, nor do I discuss the fibrous merits of the many vegetables I feature but game is a treat without that feeling of guilt. I heard tell that venison contains less fat than a chicken breast without skin. Marvellous news. Venison is obviously trumping the chicken right about now but not only is it pretty much making you lose weight, it is local and seasonal. This game stew makes the most of all game available at this time of the year and some wonderful seasonal vegetables. read more

Venison Burgers, Chips and Purple Sprouting

It was a picturesque morning when I hopped on the bicycle and cycled to the farmers’ market. On setting off I was very pleased with myself for saving the planet and burning calories at the same time. The sun was shining, the birds were singing and I was thoroughly convinced I was the modern day Snow White. It wasn’t particularly far or mountainous but to say I arrived less than glamorous and somewhat flustered would be an understatement.
