Dried Blueberry and Almond Cereal Bars

You know when you buy an ingredient to make something and the remainder of it sits in the cupboard waiting to be used? I had a bit of this going on with oats, flaked almonds, seeds, maple syrup and dried blueberries. To use them (or as many of them as I could) up I made some lovely crumbly cereal bars. I wanted to keep the butter to a minimum to try and keep them a little on the healthy side.
Dried Blueberry and Almond Cereal Bars

Ingredients

You will need (for 12 cereal bars):

  • 225g oats
  • 100ml maple syrup
  • 150g butter
  • 75g dried blueberries
  • 50g flaked almonds
  • 1 tbsp poppy seeds

Method

Preheat an oven to 180C and lightly grease a baking tray. The one I used was about 20cm x 20cm.

Melt the maple syrup and butter together in a saucepan on a low heat until melted and well combined.

Mix the oats, dried blueberries, almonds and poppy seeds together then pour in the syrup and butter and stir together until well mixed.

Press the mixture into the prepared baking tray and then place into the oven for 25-30 minutes or until golden brown on top.

Mark into pieces while still hot then remove from the tray when cooled.

I really enjoyed these; not only because I had used up bits and pieces from the cupboard but because all the ingredients I used worked very nicely together. Chewy, slightly sour blueberries with silky, nutty almonds, a few pops from the poppy seeds and the lightly sticky oats; blooming brilliant bars. These have been a very nice treat for breakfast the past few days; it’s great to be able to almost make something for nothing.

    Love those little dots of poppy seed. Also a slight sourness from the blueberries is a great idea. It’s breakfast time. Do you do home delivery?

    It’s not that easy to find dried blueberries.. I would probably have to use dried cranberries.

    Lovely idea of not wasting and using the ingredients. I have to replace berries with something of a local version dried fruits. The bars are awesome.

    Mmmm, they look like they’ve got great crunch, sweetness and nuttiness. Do you think they would work well with agave nectar instead of maple syrup? X

    I think this is a great way of using up all the bits at the back of the cupboard. I love these type of bars but my husband complains if I add dried fruit and nuts to his flapjacks!

    I love a recipe that uses up bits of stuff I have on hand! This looks so good I’d go out and buy those bits, just so I could have leftover bits so I could make this again. 😉 Good stuff — thanks.

    Nice bars…yes, these would be great for breakfast, especially for the days that I am running out almost the same time that I am getting up.

    Granola bars basically one of the few things I can bake, so I just keep making them lol. Love the dried blueberry and almond flavour combi. Gonna try that next!
