Put the noodles into a heatproof dish. Pour enough boiling water over them to cover them well then put a lid (or plate) over the dish. Leave for five minutes.
While the noodles cook, chop up the vegetables. In a small bowl, whisk together the soy sauce, honey, lime juice, sesame oil and ginger.
Drain the noodles (check that they are soft before draining them and leave for another minute if needed).
Add the noodles to a bowl and pour over the dressing. Add the vegetables and salmon. Give everything a quick mix and then sprinkle over the sesame seeds and coriander leaves.
Notes
Use a little extra sesame oil on the noodles after draining to help stop them sticking together.
